Spiced Cranberry Baked Oatmeal

A few weeks ago, I shared my fav recipe for Gluten-Free Pumpkin Spice Baked Oatmeal + you guys went NUTS for me! Honestly, I don’t blame you. What’s not to like about a warm, hearty, spicy, sweet breakfast that’s super easy to make + even easier to eat? And y’all, I’ve done it again. This Dairy-Free Spiced Cranberry Baked Oatmeal is even better than the last one. Seriously.

The Easiest Breakfast

I said this last time, but I really do love baking my oatmeal because it is totally hands off. You stir the ingredients together + throw it into the oven. So, while it does take a little while for the oatmeal to bake, you can sip your morning coffee or do last night’s dishes while breakfast cooks.

It’s incredibly easy + incredibly good.

It’s also super hearty + really, really cost effective. This Dairy-Free Spiced Cranberry Baked Oatmeal can be thrown together for a few dollars (or £), and it feeds 6-8 people! The warm, cakey texture eats like a proper breakfast much more than a simple bowl of cereal.

I call that a breakfast win!

Spiced Cranberry Goodness

I’m not sure that it’s possible to explain how incredible the flavour of this Dairy-Free Spiced Cranberry Oatmeal is. To be honest, I was SHOCKED when I took the first bite. I knew that it would be delicious, but I had no idea it would be this delicious.

Maple syrup is the perfect sweetener for this dish. It’s nice and smooth without being overpowering. The mashed banana adds to the cake-like texture and a level of intensity of the underlying sweetness. The hint of spice from the cinnamon and nutmeg offsets the sharpness of the cranberries. And the nuts are the perfect amount of crunch.

This flavour profile is PERFECTION.

If we’re talking Christmas Eve or Christmas Morning breakfast, this is your guy. (Or, if you want a normal day to FEEL like Christmas morning, this is still your guy 😉 )

Prepping Dairy-Free Spiced Cranberry Bake Oatmeal

This dish is PERFECT for meal-prep. I know meal prep sounds like something that body builders do, but actually, if you’re a busy mom or dad or single, this can save your life. You bake it once and you either have breakfast for the entire family with one prep or you have breakfast for a few DAYS. It freezes and reheats beautifully + will keep well in the fridge for at least a week.

Also know that you can make this dish your own, to suit your or your families needs. To make it gluten-free (like I do), just use gluten-free oats. Vegan? Swap the eggs for flax eggs. Don’t like nuts? Leave them out! Love it SUPER sweet? Add a few extra tablespoons of maple syrup. Seriously, it’s hard to mess this one up.

To serve, eat on its own with extra maple syrup, milk, nuts, granola or yoghurt on top! Or, serve smaller pieces along side some eggs or bacon. However you do it, this one is BOMB.

I know I say this a lot, but GUYS, you HAVE to make this recipe. It’s quick, easy, delicious, and totally allergen friendly. It’s real food + real good.

Dairy-Free Spiced Cranberry Baked Oatmeal

Servings 6

Ingredients

Wet Ingredients

  • 2 eggs
  • 1/2 cup mashed banana (roughly one banana!) (can sub apple sauce or greek yogurt for this too.)
  • 2 cups dairy-free milk (almond, cashew, coconut or oat work here!)
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup

Dry Ingredients

  • 3 cup oats** (use gluten-free oats, if necessary)
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup dried cranberries
  • 1/3 cup chopped walnuts (optional!)

Instructions

  • Preheat the oven to 175c or 350f. Grab a 9×13 baking dish. (I dont grease mine, but feel free to spray or oil your pan if you're worried about it sticking!)
  • In a large bowl, mix together all of the wet ingredients. Be sure to whisk it until the eggs are combined with the other items.
  • In a separate bowl, mix together all of the oats, spices and other dry ingredients. (Feel free to save a few nuts + cranberries to decorate the top of the bake!)
  • Add the dry inredients to the wet ones and stil until all of the oats are thoroughly coated!
  • Pour the entire mixture into the baking dish. If desired, decorate the top with extra cranberries and walnuts. Bake for 35-40 minutes or until the top of the oats appear dry and set.
  • Serve with extra maple syrup, yoghurt and/or extra chopped nuts and cranberries!

Notes

**I prefer using jumbo oats or rolled oats in baked oatmeal, but feel free to use instant or quick oats too. Just be aware that it will change the texture slightly.
