Can we all just agree that sometimes you need a big ole plate of comfort for dinner? I know it can’t be just me that, come fall + winter, when the nights are dark + long, just needs a hug in food form. And ya’ll this Easiest Paleo Meatloaf is exactly that.

It will wrap you up in it’s “this is the type of food my momma used to make” hug + offer up that simple kind of joy that only a true comfort food can.

I knew that if I was going to create a meatloaf recipe, it really needed to be easy, made in one bowl + take into account any sort of dietary restrictions. This Easiest Paleo Meatloaf fits the bill 1000%.

Low Carb Meatloaf

Ingredients in this Easiest Paleo Meatloaf

A lot of the ease and simplicity of this meatloaf comes from the ingredient list. It’s short, but effective + also really easy to customise if you need to pivot + use what you’ve got at home. I really can’t image this turning out badly, but here’s what I suggest throwing into your bowl:

  • ground pork + ground beef – Really, just be sure that you’ve got 2 lbs of ground meat. You could really use any mix that you like! Just be sure you’ve got a bit of fat in at least one of your cuts. It makes this taste good!
  • onion
  • garlic
  • egg
  • almond flour – I haven’t tested this, but I imagine that you could use oat flour or gluten free breadcrumbs here instead if you need to! (It just won’t be Paleo or Whole30 if you make the switch.)
  • mustard – be sure it’s alcohol free if you’re on a Whole30
  • ketchup – I love using a naturally sweetened ketchup here, but be sure it’s sugar free if you’re doing a Whole30
  • salt + pepper

That is literally it! Isn’t this the easiest paleo meatloaf?!

It’s literally a dump + go. One bowl, a little bit of measuring + mixing and BOOM. Dinner! There’s no sautéing onions first or anything cooking on the stove. It’s so easy.

  • Mix the ingredients.
  • Add the mixture to a loaf pan.
  • Bake.
  • Top with ketchup.

Even on my most challenging night, when I’m tired and SO don’t feel like cooking, I can manage this. I bet you can too.

Gluten Free Meatloaf

Making it a meal

Honestly, this easiest paleo meatloaf is so hearty that it doesn’t need a heck of a lot on the side to make it feel like a filling meal. So, some roasted broccoli that you throw in the oven as the meatloaf finishes would be more than enough! However, if you want to blow your family’s socks off, try serving my Salt + Vinegar Magic Potatoes on the side. Seriously. Together, this pair is to DIE for.

This meatloaf is so great for meal prep. It’ll keep in the fridge for 4-5 days + is great as a leftover meatloaf sandwich…according to my husband, ha! It also does freeze beautifully too. I would prep and cook the meatloaf before freezing. You could freeze the entire meatloaf, but I love to freeze it in slices for easy meals on the go. I slice it and layer it with parchment paper in a container in the freezer. Then, when one of us needs something quick, we just pop out a slice and throw it in the microwave. Done!

This easiest paleo meatloaf is the freaking best. I hope that it can deliver the easy dinner, hug-in-food-form that I’ve promised you, and I really hope you’ll try it.

Easiest Paleo Meatloaf

Prep Time 10 minutes
Cook Time 1 hour
Servings 8 servings

Ingredients

  • 1 lb ground pork
  • 1 lb ground beef
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 1 egg
  • 1/3 cup almond flour
  • 2 tbsp ketchup***
  • 1 tbsp mustard
  • 1/3 cup ketchup
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

  • Preheat the oven to 400f/200c and line a loaf pan with some parchment paper. (The parchement doesn't need to fill the whole pan, but a strip of parchment will help you remove the meatloaf when it's cooked.)
  • Add all of the meatloaf ingredients to a large bowl except for the extra ketchup, which is reserved for the topping!
  • Using a fork, or your hands, mix the meatloaf ingredients together. Be sure not to press or compact the meat if you can help it, just make sure you keep mixing until it's one cohesive mixture!
  • Add the meat mixture to the prepared loaf tin and form it into a loaf shape.
  • Bake the meatloaf for 20 minutes.
  • After 20 minutes, remove the meatloaf from the oven and spread the remaining ketchup over the top of the meatloaf. Return it to the oven and bake for 30-40 more minutes or until the meatliaf is cooked!
  • Serve with extra ketchup for dipping!

  1. That has been my recipe for years! I put oats in it to bulk it up and stretch it when the kids were little. Funny how the old fashioned was Paleo the whole time.
