This Paleo Mint Chocolate Chip Protein Smoothie is chock full of veggies, but it tastes like a milkshake. It’s dreamy, creamy + packed with protein, fiber + fat for a truly satisfying smoothie.
I’ve always been a lover of smoothies for a quick, delicious breakfast. But for YEARS, I had no idea how to make them well. They always tasted great, but I’d be absolutely starving an hour or two after I took the last sip. That is, until I stumbled up on the incredible smoothie formula from @bewellybkelly + I’ve never looked back. This Paleo Mint Chocolate Chip Protein Smoothie ticks all of the boxes!
Here’s what most of us get wrong when we create a smoothie: we load it up with fruit so it tastes good, right? But then, our blood sugar spikes + then drops + we’re left hungry again. Let me introduce you to my new smoothie formula that has totally changed the game:
Veggies + Protein + Fat + Fiber
This Paleo Mint Chocolate Chip Protein Smoothie follows this formula to a tee. So, while it tastes like a milkshake, it will keep your belly + blood sugar happy until your next meal.
Ingredients in the Paleo Mint Chocolate Chip Protein Smoothie
This recipe is really forgiving, so feel free to make it your own. I change it up based on what I have on hand, but I’ll lay out my ideal version down below. Here’s what I use in my perfect paleo mint chocolate chip protein smoothie:
- Frozen Vegetables – I adore using a mix of frozen cauliflower and frozen zucchini in my smoothie. It creates the creamiest texture + you really can’t taste it! You can also use frozen squash, cucumber or spinach! Sometimes I even throw in frozen broccoli stems to help use up food waste!
- Frozen Banana – I have for sure made this smoothie without any fruit, but I do love adding 1/2 a frozen banana for the sweetness!
- Ground Flax Seed – The fiber in ground flax helps this smoothie to have some staying power + also helps with digestion. You could totally use chia seeds, physillium husk, acacia powder or whatever other fiber you like! Or, feel free to leave it out.
- Cacao or Cocoa Powder – Again, this is optional, but adding some cacao or cocoa powder really does bring the most rich, chocolate flavour + all sorts of antioxidants!
- Nut Butter – I have used almond, peanut + cashew butter here + they’re all divine! The fat from the nut butter really makes it so satisfying and creamy. You can use MCT oil or coconut oil too.
- Protein Powder – Be sure to use a paleo protein powder if that’s important to you. My FAV is Nuzest. It has 3 ingredients, is totally hypoallergenic + tastes amazing. - Peppermint Extract – This extract is what gives this smoothie it’s mint flavour! You could totally use fresh mint leaves, but I love the extract.
- Non-Dairy Milk – You can totally use almond, cashew, coconut – whatever milk you want!
- Cacao Nibs – Cacao nibs are totally optional, but they add the most amazing crunch – almost like chocolate chips! They aren’t sweet at all, but I adore them.
- Optional Sweetener – I do add a bit of extra stevia to my smoothie, especially if I haven’t added banana, but you can use honey or maple syrup too! Make it sweet enough for your taste.
- Salt – I know this is a weird one, but I ALWAYS add salt to my smoothies. It actually brings out the sweetness – go figure!
Making the Smoothie
I do use a high speed blender to make my Paleo Mint Chocolate Chip Protein Smoothie. Mark + I bought a Vitamix when we got married + we use it every single day. However, you can totally make this shake in any blender, you just may need more liquid if your blender isn’t as strong.
To make it, simply add all of the ingredients, minus the cacao nibs, and blend! Stop to scrape down the sides of the blender as needed in the process – when it’s done, it should be creamy + delish! The last step is to toss in the cacao nibs + give it all a little pulse – it’ll create tiny, little chocolate flecks in your shake that really make it like mint chocolate chip ice cream!
Once you’ve finished blending your smoothie, give it a taste. Adjust the ingredients as needed – add more sweetner or cacao or peppermint extract. Seriously, make it your OWN! Want to take it to the next level? Add some of my Chocolate Sea Salt Granola on top – wow.

Paleo Mint Chocolate Chip Smoothie
Ingredients
- 1/2 cup frozen cauliflower
- 1/2 cup frozen zucchini
- 1/2 frozen banana
- 1 serving Nuzest Vanilla Protein (or other fav protein powder)
- 2 tbsp ground flax seed (or chia seeds)
- 1 tbsp cacao or cocoa powder
- 1-2 tbsp nut butter
- 1/2 tsp peppetmint extract
- 1-2 cup non-dairy milk
- 1 tbsp cacao nibs
- 1 pinch salt (optional)
- stevia, honey or maple syrup to sweeten (optional)
Instructions
- Add all of the ingredients (except the cacao nibs) to a high speed blender. Start low and slow, pressing the smoothie ingredients into the blade. Stop and scrape down the sides as needed.
- Once the smoothie is finished blending, add the cacao nibs + pulse for 5-10 seconds to just begin to break them up.
- Serve and enjoy!
