This week, I’m turning 32, which just feels crazy. I always thought my life would be tied up with a pretty bow by the time I was this age + instead, I’m still living in a rented apartment with no kids + feel like I’m guessing at half of the choices I make….but I’m so happy. In fact, I couldn’t be more grateful that my life hasn’t panned out exactly in the boring manner that I always planned it. I have a husband who I love more than I ever thought possible + a crazy, unpredictable life in England with people I love all over the world. And that is worth celebrating…with Paleo No Bake Birthday Cake Bites!
These birthday cake bites are DREAMY! They are creamy, soft + come together in just minutes. They’re gluten free, dairy free + refined sugar free, but they taste rich, decadent + are full of funfetti like flavour!
They are totally worth making + eating for any + all types of celebrations that you have going on…birthday or no birthday!
Ingredients in Paleo No Bake Birthday Cake Bites
These Paleo No Bake Birthday Cake Bites are really easy to make and are made with really simple ingredients. Here’s what you’re going to need:
- cashew butter: you can totally swap this nut butter out for almond, peanut or sunflower seed butter, but cashew butter will produce the most true to birthday cake taste.
- maple syrup: honey works too!
- vanilla extract
- almond extract: don’t leave this out! This is what really ups the birthday cake flavor.
- almond flour: you can use cashew flour or oat flour as a replacement if you need to! You just might need to play with the ratios a little.
- coconut flour: if you don’t have coconut flour, you can add extra almond flour too, but you’ll need to increase the amount!
- salt
- sprinkles: you can use a paleo based sprinkle if you want to keep these totally paleo!
Putting these Birthday Cake Balls Together
The second best part of these paleo no bake birthday cake balls? They come together in literally minutes. They’re so quick + easy!
In a bowl, you’re simply going to stir together the wet ingredients + then adding the dry ones! Then, it’s just a bit of mixing. The stirring it together part can feel like it’s not working – it’s a stiff dough – but I promise you that it will. Keep mixing! You can press the ingredients up against the side of the bowl to really help mash it into one cohesive mixture.
Once the paleo no bake birthday cake bites come together, the last thing to do is to mix in the sprinkles!
Once the dough looks good, use a spoon or a cookie scoop to portion out 1-2 tablespoons of the dough + shape it into a ball. Lastly, roll in extra sprinkles if you want! It adds the most delicious crunch to the outside. Yum!
Storing the Bites
These Paleo No Bake Birthday Cake Bites can be stored at room temperature, in the fridge or even in the freezer. All three methods will give you a slightly different texture.
- room temperature: these bites will stay soft at room temperature, almost like a perfect bar texture!
- in the fridge: the bites will firm up, but will still be soft.
- in the freezer: the bites will freeze solid, but are DELISH to eat as they thaw 5-10 minutes once you remove them from the freezer.
Depending on how you store them, these bites will last anywhere from a few weeks to a few months, but I doubt they’ll last that long! We can go through a batch of these delicious babies in a few days!

Paleo No Bake Birthday Cake Bites
Ingredients
- 1/2 cup cashew butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1/2 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp salt
- 2 tbsp sprinkles
Instructions
- In a medium bowl, add the cashew butter, maple syrup, vanilla + almond extract. Mix until combined.
- Add the almond flour, coconut flour and salt to the cashew butter mixture. Stir until a dough forms. The mixture will be thick – just jeep mixing! It'll come together.
- Once the dough forms, add the sprinkles and mix until combined.
- Using a cookie scoop or a spoon, scoop out balls of dough. Roll until evenly shaped + roll in extra sprinkles if desired!
