These Paleo No Bake Peppermint Brownie Bites are what your seasonal dreams are made of – sweet, minty and full of chocolate goodness!
Earlier this year, I went on a bit of a no bake treat craze. We had No Bake Cookie Dough, No Bake Samoa Bars, No Bake Carrot Cake Bites… But the most popular recipe by a landslide was my Paleo No Bake Brownie Bites.
And for good reason! They are simple, easy to make, quick to throw together + yet, they taste like rich, dark, decadent brownies in bite form.
Well friends, meet the sister to my original recipe. These Paleo No Bake Peppermint Brownie Bites are just as delicious, but with the perfect peppermint twist.
If you’re looking for a seasonal snack time star for the holiday season, these are it!
Ingredients in these Paleo No Bake Peppermint Brownie Bites
Part of the charm of this recipe is just how simple they are to throw together. In fact, you really can make and change these as you need, so don’t let the strictness of a recipe stress you out. They’ll be great!
But, if you want to make these Paleo No Bake Peppermint Brownie Bites the same way that I do, here’s what you’ll need:
- nut butter – I love using cashew butter so the peppermint and chocolate can shine through, but any nut butter will work!
- maple syrup – you could use honey too, but it won’t be as sweet!
- peppermint extract – this is what makes these minty, but you may get away with 1-2 drops of peppermint essential oil if you want to go au natural.
- almond flour – if you can’t have almonds, you could use ground cashews or potentially ground oats, but you might need to play with the ratios.
- cacao or cocoa powder – either one works, but you need one to make them brownie!
- salt
- chopped chocolate
- optional toppings – you can totally eat these as is or top them with extra melted chocolate and some chopped peppermint. You do you!
Putting the Bites together
Making these Paleo No Bake Peppermint Brownie Bites is just as simple as the ingredient list. Honestly, it’s a little bit of dumping, stirring and shaping. That’s it!
First, mix all of your wet ingredients together in a bowl.
Next, add the dry.
Now, when you get to mix in the dry ingredients, the batter will feel thick. It will feel like it’s too dry to come together, but trust me. It will. Just keep mixing and pressing the dough up against the side of the bowl. Heck, get in there with your hands in you need to.
Once you have a dough, add the chopped chocolate and mix it all again.
The last step in these Paleo No Bake Peppermint Brownie Bites is just to shape them! You could totally press these into a pan and slice into bars, or you can scoop and roll into balls like I do. Whatever feels right!
These Paleo No Bake Peppermint Brownie Bites are divine completely as they are – unadorned and perfect. However, if you want to be a little bit extra (like I did), feel free to drizzle the top with extra chocolate + top with crushed peppermint. The candies most likely won’t be Paleo, but hey, sometimes you gotta live a little!
These can keep at room temperature or in the fridge, where they will thicken a touch. Honestly? I love them from the freezer too, where they’ll keep for months. But if past experience is any guide, these Paleo No Bake Peppermint Brownie Bites won’t last very long in your house 😉

Paleo No Bake Peppermint Brownie Bites
Ingredients
- 1/2 cup cashew butter (any nut butter will do)
- 2 tbsp maple syrup
- 1 tsp peppermint extract
- 1/2 cup almond flour
- 2 tbsp cacao or cocoa powder
- 1/4 tsp salt
- 1/3 cup chopped chocolate
Optional Decorations
- 1/3 cup chocolate
- 1 tsp coconut oil
- chopped peppermints
Instructions
- In a medium/large mixing bowl, add the nut butter, maple syrup and extract. Stir until combined.
- Next, add the almond flour, cacao and salt. Mix, pressing against the side of the bowl, until you get a stiff dough. It will take a moment, but it will come together!
- Lastly, stir in the chopped chocolate or chocolate chips.
- Using a cookie scoop or tablespoon, scoop out balls and roll between hands to shape!
Optional Decoration
- Melt the chocolate and coconut oil together in the microwave in 30 second bursts.
- Drizzle the melted chocolate over the top and sprinkle with crushed peppermint if desired.
These are amazing! I normally make thin mints at Christmas time but these are 100x easier and so yummy!

I just made these and they were very dry…had a lot of trouble getting them to stick together. I used Almond butter, instead of cashew. Could that have made a difference? Despite the problems sticking, they are delicious and will def make again!
