Whole30 Creamy Bacon Chicken

I’ve done a lot of international travelling in the last few months, which happens when you marry an international husband. I’ve also taken on a second job + have been trying to grow my blog + invest in my real life too. And your girl is feeling tired.

Not like the big, bad, overwhelming kind, but the sort of body tired that makes meal planning + cooking feel like the last thing in the entire world that you want to do doing.

This Whole30 Creamy Bacon Chicken was born out of that space – out of my too tired to cook, space, ha.

One Pan Chicken

This main dish masterpiece is made entirely in one pan, which is great for tired hands because it means less washing. It also means that the flavour from the crispy bacon, the caramelised onions + the chicken that we’re cooking all meld together beautifully into a gorgeous pan sauce.

It’s divine + you’ll wish you could pour it on anything and everything.

“Whole30” Creamy Bacon Chicken

This recipe is also a winner, winner chicken dinner because it’s completely allergen friendly. It’s free from gluten, grain, dairy, soy, sugar + stress, ha! All of the flavour comes from real, whole food ingredients like bacon, onions + garlic, salt + nutmeg. It’s super simple, but it’s also super good. The entire recipe has 11 ingredients, 3 of which are salt, pepper + water. It’s as basic as it gets, you tired cooks, I assure you.

But even without diary, it IS a cream sauce. The silky, creamy texture comes from coconut milk which makes the sauce uber dreamy, but without any gut-irritating lactose. And I promise, it doesn’t even taste a tiny bit like coconut. My coconut hating husband couldn’t tell one bit!

To ensure that the sauce thickens nicely, I do suggest following the recipe + adding a slurry made from either arrowroot + water or cornstarch +water (if you aren’t worried about remaining Paleo or Whole30). It will still taste the same without it, it just won’t coat the chicken in the same way.

To make the Whole30 Creamy Bacon Chicken into an entire meal, I’d suggest serving it alongside of some potatoes – these Salt + Vinegar Magic Potatoes or Sweet + Salty Magic Sweet Potatoes would both go BEAUTIFULLY. Throw some steamed spinach or roasted broccoli on the plate + call it a day.

Or heck, if you can’t be bothered to cook another recipe, serve this chicken on top of some rice, stuffed in a baked potato or even alongside a simple salad. You really can’t go wrong!

This meal can be prepped in advance + reheated as needed. Or, you can even throw leftovers into the freezer to break out on a night when you’re too tired to cook ANYTHING (been there).

Whole30 Creamy Bacon Chicken

Prep Time 5 minutes
Cook Time 40 minutes
Servings 4 people

Ingredients

  • 4 slices bacon
  • 2 tbsp oil or ghee
  • 2 pounds chicken thighs (breasts work too)
  • 1 large onion, sliced
  • 2 garlic cloves, mined
  • 1 can coconut milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg
  • 1/2 tbsp arrowroot powder or cornstarch
  • 1 tbsp cold water

Instructions

  • Preheat the oven to 400f or 200c + preheat an oven safe skillet on the stove to a medium/high heat.
  • Chop the bacon into small peices and fry in the preheatwed skillet until crisp. Remove the bacon bits from the pan, but leave the bacon fat! (Save the bacon!)
  • Sear the chicken thighs in the same, unwashed pan on each side until golden brown. (Don't worry, we'll finish cooking them later.) Remove from the pan + set aside.
  • Turn the pan's heat down to medium and add the onions, garlic and salt. Sautee for 5 minutes or so, until golden and transluscent.
  • Add the can of coconut milk to the skillet, scraping the brown bits off of the bottom of the pan. Add the pepper and nutmeg.
  • In a separate dish or cup, mix together the arrowroot powder + cold water. Add the "slurry" to the sauce and stir until thickened.
  • Turn off the heat and stir back in the bacon + nestle the chicken peices into the sauce.
  • Place the entire pan in the oven for 30 minutes, until the chicken is cooked through and the sauce is nicely thick!
