Sometimes a girl is just too tired to cook – you feel me? Whole30 Sausage Sheet Pan Dinner to the RESCUE!
I know that I run a food blog, that I dream about new recipes + watch cooking shows in my spare time… But sometimes after a long day of work, the last thing that I really want to do is to think about what the heck to cook + then wash a bunch of pans afterwards. Ain’t nobody got time for that.
But, not all heroes wear capes, ladies + gentlemen. Meet your new best friend, the sheet pan dinner. You simply chop all of your veggies + throw them onto a pan with some sort of meat. It all cooks together and makes the most amazing meal! And, only one pan to clean afterward! Yay! And this Whole30 Greek Sausage version is so, so good.
What’s in this Whole30 Greek Sausage Sheet Pan Dinner?
The world is your sheet pan oyster! The idea of a sheet pan dinner is hugely customisable, although I will say that the recipe, as written, is really, really delicious.
Firstly, you choose a meat. You can create a sheet pan meal around salmon or chicken or pork. Today we’re using chicken sausages. You could absolutely use pork sausages too, but I ADORE the flavour of chicken sausages. Secondly, we need to pick some veggies. For this specific dinner, I chose peppers + onions. They caramelise in the oven + SING alongside of the sausages.
If you’re in the mood to cook, you can absolutely serve a sheet pan dinner with pasta or rice, but when I say “sheet pan dinner”, I want the ENTIRE meal to be on ONE PAN. So, we’re using potatoes. They cook perfectly right alongside of the veggies + meat. It take less than 5 minutes to prep. SO EASY, even you tired mommas can manage it!
Lastly, toss all of the ingredients with some oil to help it brown + some seasonings to give is real pizazz. We’re going greek today, so it’s lemon juice, garlic, olive oil, salt + oregano. It’s super, super simple, but so incredibly delicious.
The best part? Once you prep it, you just throw it onto a baking sheet + bake it all together!

Whole30 Greek Sausage Sheet Pan Dinner
Ingredients
- 3 large white potatoes
- 2 red peppers
- 1 red onion
- 1 lb chicken sausages (precooked)
- 4 tbsp olive oil
- 2 cloves minced garlic
- 2-3 lemons, juiced
- 1.5 tsp sea salt
- 2 tsp oregano
- 1 pinch red pepper flakes
- 1 cucumber, chopped or sliced for topping (****OPTIONAL)
Optional Yogurt Sauce
- 1/2 cup plain coconut yogurt
- 1 lemon, juiced
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 cup grated cucumber
Instructions
- Preheat the oven to 200c or 400f. Line a large, or two small, baking sheets with parchment paper and set aside.
- Chop the peppers and onions into long, thin slices and the potatoes into 1 inch cubes.
- In a bowl, toss together the chopped peppers, onion, potatoes, minced garlic, olive oil, salt, oregano, red pepper flakes, + lemon juice. Toss until thoroughly mixed.
- Spread out the vegetables and potatoes onto the lined baking sheets.
- Bake for 25-35 minutes. Remove from the oven, toss and add the chopped sausages to the mixture.
- Bake for an additional 20-25 minutes or until the sausages are warmed through and the potatoes are golden brown!
Optional Yogurt Sauce
- Mix ingredients together and serve on the side of the meal!
