This Whole30 Beef Stroganoff is easy, quick and tasty. It’s completely dairy + grain free, making it Paleo, Whole30, Keto + freaking delicious.

At the risk of sounding like one of those annoying food bloggers who writes paragraphs and paragraphs about their emotional connection to a certain food, I do have to say: I have an emotional connection to beef stroganoff. My mother made this meal for us growing up like once a week. And while my Whole30 Ground Beef Stroganoff is a far cry from the cream of mushroom soup version my mama made us when our budget was LOW, it has all of the same nostalgic comfort flavours that I love.

This recipe is incredibly hearty, warm and filling, so it’s the perfect meal to transition into those cooler autumn nights. It’s also great for meat prep or to feed a hungry crowd. The recipe says that it feeds 4, but it’s probably more like 6. I just would always rather over-cater than under 😉

You learn things like that in a house with 3 brothers growing up. We’d all fight for second helpings of this beef stroganoff…and finish with some Aldi brand Oreos from the back of the cupboard for dessert. These days, I prefer my Paleo No Bake Brownie Bites, but this meal still hits the spot.

Ingredients for Whole30 Ground Beef Stroganoff

I tried to keep the ingredient list for this meal as short and sweet as possible. It really is flexible, so feel free to stray from the recipe if you need to. As long as you’ve got the basics, your results will be delish. Here’s what we’re using:

  • Ground Beef
  • Cashews
  • Broth or Stock – I used chicken bone broth, but use whatever you have handy!
  • Mushrooms – I used dried mushrooms, but you could totally use fresh here. Any mushroom works, but I used porcini! If you use fresh, you’ll just want to sauté them before you add them to the sauce.
  • Garlic Powder
  • Salt + Pepper
  • Lemon Juice – If you don’t have this, just use a splash of apple cider vinegar instead. The acidity just helps to lift the dish!

That’s it! Simple, yet effective. And all of these ingredients keep this dish Whole30, Paleo, Gluten Free, Grain Free, Dairy Free, Soy Free + Sugar Free! You totally don’t have to eat that way to enjoy this recipe, but I want to make sure its accessible for those of us that do.

Putting the Dish Together

To prep this meal really shouldn’t take very long. If you’re using dried mushrooms, it shouldn’t take more than 15-20 minutes total. If you’re cleaning, chopping and sautéing mushrooms to add to the sauce, add another 10 minutes, but still so worth it! Here’s how to put it together:

Start by soaking your cashews in some boiling water. Using boiling water means they really only need to sit for 5 or so minutes before they’re ready to used to make the creamiest, dreamiest sauce.

While your cashews soak, we’re going to sauté the beef (and the mushrooms if we’re using fresh!)

To make the sauce, it’s as easy as dump and blend. I love using my Vitamin to ensure that my sauce is uber creamy, but if you don’t have a high speed blender, just make sure to stop and scrape yours down as needed. Just throw all of in the ingredients in and blitz away!

Lastly, stirring the sauce into the saucepan with the beef will allow the sauce to heat through and thicken slightly. Once it’s hot, it’s ready to serve!

Making this Whole30 Ground Beef Stroganoff a Meal

To take this from a sauce into a proper meal, I served it over sweet potato noodles. However, you could go with traditional pasta or rice if you aren’t worried about keeping it Whole30. It’s also really delicious one its own in a big ole bowl with some greens. Or, serve it alongside of my Salt + Vinegar Potatoes for an interesting, zingy combo!

Whole30 Ground Beef Stroganoff

Ingredients

  • 1 lb ground beef

Cashew Stroganoff Sauce

  • 1 1/2 cups cashews
  • 1 cup sliced or chopped mushrooms*** (can use dried or fresh)
  • 1 1/2 cup chicken or beef stock/broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1/2 lemon, juiced

Instructions

  • ***If you're are opting to use fresh mushrooms over dried, start by cleaning, chopping and sauteeing then in a skillet until they are tender. Set aside.
  • In a medium bowl, cover the cashews in boiling water. Sit aside for 5 minutes.
  • Over medium/high heat, sautee your beef in a large skillet until it is cooked. Break it apart with a spoon as it browns to ensure it cooks evenly.
  • Drain the water off of the cashews and add them to a blender or food processor along with the other sauce ingredients. Blend until smooth – stop and scrape down as necessary.
  • Pour the sauce over the ground beef in the skille, turn the heat to low and cook until the sauce warms through and thickens slightly.
  • Serve fresh!

Notes

*** I used dried porcini mushrooms, but you could use whatever dried or fresh mushrooms you can get your hands on. Or, feel free to leave them out! They just add great umami flavour.
