Last week, I shared the most delicious spring time salad. If you haven’t already, I’d hugely encourage you to check out, and to make, Sarah’s Salad with Paleo Green Goddess dressing. It’s an incredible salad, full of texture, on its own, but THAT DRESSING. I could eat it on a flip flop. The recipe for the Green Goddess Dressing always yields leftovers in my house, which is exactly how these Whole30 Twice Baked Sweet Potatoes were born.
I knew that I had to do something with the wealth of saucy gold that I had sitting in my fridge. This Green Goddess Dressing is creamy + zesty + much too good to waste. The good news is, this week I also just happened to have a few sweet potatoes sitting in my produce drawer that were desperately in need of eating. I thew this recipe together on a whim, but it was so delicious I knew that I had to remake it for you guys!
Since that original, happy creation, I’ve cooked these sweet potatoes four or five times + my husband and I devour them just the same. In fact, I feel like the more I eat them, the more I want them!
What’s inside?
The base: let’s start with the sweet potato, which I firmly believe is one of the best produce purchases possible. Firstly, sweet potatoes are not expensive. It’s possible to feed your entire family, no matter how large, for a reasonable amount when the bulk of your meal comes from one of these babies.
And not only are sweet potatoes cheap as, but they taste great and are chock full of nutrients! Did you know that just 100 grams of sweet potato contains all of your Vitamin A needs for an entire day? They’re also stacked with Vitamin C, Potassium, Manganese, Vitamin B6, B5 + Vitamin E. Gram for gram, they’re one of the most nutrient dense options in the grocery store – especially from a carb source.
To give this meal a bit of protein, to ensure a stable energy burn + blood sugar, I added some ground meat into the mix. Our favourites have been ground turkey, ground chicken and ground pork (we’ve tried all 3), but ground beef would work here as well. The meat also adds a nice amount of texture to the smooth, potato filling. If you don’t eat meat, feel free to leave it out or replace it with tofu or even chopped nuts!
Lastly, adding caramelised onions + spinach ups the veggie content of these Twice Baked Sweet Potatoes. You can absolutely just sautée this all together with your meat, but I recommend browning the onions on their own. The sweetness of the onions really compliments the sweetness of the potato.
That Dressing Though…
To really help the filling of these potatoes come together, it requires some liquids. This is where that Paleo Green Goddess Dressing comes in. GUYS, who doesn’t want to cook once, eat twice? Throwing this dressing together in your blender or food processor is so easy + so good. You can use it all week long on different meats, salads and even pastas.
The ingredients for the dressing are all whole food based, with things like coconut milk, chives, parsley and lemon juice on the list. There are no vegetable oils in sight, but you won’t miss them one bit. I can promise that this sauce is superior to anything that you’ll find on a super market shelf. It’s creamy, thick + full of flavour.
Plus, it’s completely customisable! Like dill? Add some. Want more tang? Squeeze in a bit more lemon! You can increase the garlic, the onion powder, honey or the Worcestershire sauce to whatever your taste buds prefer.
These Twice Baked Sweet Potatoes are perfect for an easy weeknight meal or as a meal prep option. You can roast the sweet potatoes in advance – you can even stuff them in advance, and just bake them off as you need them! They reheat beautifully and are even delicious for breakfast with a fried egg on top (weird, I know, but Whole30-er’s, you get me!). Serve these up with Sarah’s Salad on the side or just some plain fresh greens work too.
Cooking one, eating twice is such a bang for your buck + it saves you tons of time! These potatoes are impressive enough for company, but simple enough to throw together on a busy weeknight. I promise that this a meal that you’ll want to make again and again.

Twice Baked Sweet Potatoes
Ingredients
- 4 swee potatoes, medium-large
- 1 lb ground meat (pork, chicken or turkey are great! )
- 1 tbsp olive oil or coconut oil
- 1 large onion, sliced
- 1 bag baby spinach
- 1 cup Paleo Green Goddess Dressing**
Instructions
- Preheat the oven to 400f or 175c.
- Place the sweet potatoes on a baking sheet + roast for 40 minutes or until tender.
- In a skillet, heat a skillet on medium and brown the ground meat. Cook until completely cooked thorugh, breaking the meat into small chunks.
- Remove the cooked meat from the pan + add the oil. Sautee the sliced onion with a sprinkling of salt until golden.
- Add the spinach + the cooked meat back to the hot pan. Turn off the heat. Stir until the spinach is wilted.
- In a bowl, scoop out the inside of the sweet potatoes. Try to leave a rim of flesh around the sweet potato skin to give the potatoes some stability.
- Using a fork or a potato masher, mash the insides of the sweet potato in the bowl.
- To the mashed sweet potato, add the meat, spinach and onions. Add the Paleo Green Goddess Dressing** and stir to combine.
- Divide the filling and distribute it evenly between the 8 potato halves + place on a baking sheet.
- Bake the potatoes for 30-40 minutes or until completely heated through and slightly golden. Top with extra Green Goddess Dressing.
