3 Ingredient Paleo Strawberry Nice Cream

My husband is not a paleo eater. He doesn’t care about the Whole30 either. To be honest, he’d happily eat toast, cereal, sandwiches and/or pizza for every single meal. But, there is one whole food based recipe that he requests again + again (even more often than his pizza’s!), and it’s this 3 Ingredient Paleo Strawberry Nice Cream. He’d have me make it 2 or 3 times a week if our tiny freezer was big enough to hold that many frozen bananas, ha!

And the thing is, this recipe is so stupid simple to make that I’m more than happy to give it to him as much as he wants! It’s just a plus that it’s grain, gluten, dairy, soy, and sugar free! (It can even be nut free too depending on your choice of milk.)

If you have husbands or friends or parents of kids who have a sweet tooth (or even if its you, ha!), this is dreamy, creamy Paleo Strawberry Nice Cream is such a good, lower sugar option. It still has natural sugar, yes, but it’s also accompanied by all sorts of vitamins, minerals + fibre.

What Makes it Paleo Strawberry Nice Cream?

Firstly, I’d just like to mention that there is absolutely nothing wrong with regular ice cream. If your stomach can handle full fat dairy, I say go for it. But for those of us who can’t, and those of us who are watching our sugars or fats for health reasons, this is a great option. It’s generally called “nice” cream because its a “nicer” version of ice cream, basically made from fruit!

There are really only 3 ingredients in this frozen delight and two of them come from the earth. The base of this “nice” cream is bananas. They give such incredible creaminess to this dessert, mimicking the texture of the real, dairy thing. Bananas are super rich in Vitamin B6, more so than nearly any other fruit! They contain moderate amounts of Vitamin C, Potassium and fibre. So, not only do they taste yummy, but they’re bringing some other things to the table too.

Next, frozen strawberries. Strawberries also have high levels of fibre, Vitamin C, Manganese, Folate and Potassium. Sounds like a multivitamin, but tastes like the sweetness of summer! I use an entire cup of them when I make this recipe!

Lastly, the only thing you’ll need is a bit of liquid to whiz it all up! My favourites are cashew or coconut milk, but Mark prefers regular dairy milk. Orange juice or coconut water would be super yummy too – use whatever makes you happy.

Easy Peasy, Nice Cream Squeezy

This recipe could not be easier if it tried. It’s literally 3 ingredients, and it comes together in minutes. The hardest (and longest) part is waiting for the bananas to freeze. In my personal opinion, the spottier the bananas are, the better. However, my husband would disagree, ha!

To make the “nice” cream, all you need to do is to throw your ingredients into a food processor or a high speed blender. The processor will require that you use less liquid to blend the ingredients, but we don’t have one. Our blender works great!

As you process the bananas and strawberries, they’ll slowly start to come together from the bottom up. You most likely will need to stop the blender or processor a few times to scrape down the sides and to push the unblended items towards the blade. Try this before you add more liquid!

Once you’ve reached your desired consistency, you can either eat it straight away (our preference) or throw it into the freezer for a few hours until it becomes more solid. Your choice!

This dessert is great for a weeknight because it takes literally no effort. It’s the perfect night cap after a dinner of Best Salad Ever or Whole30 Honey Mustard Chicken. You can keep it as a light treat, or it’s also wonderful served with some peanut butter or chocolate drizzled over the top. We love ours with extra fresh raspberries or strawberries! Granola on top is also unreal, trust me.

3 Ingredient Strawberry Nice Cream

Servings 2 people

Ingredients

  • 3 frozen bananas
  • 1 cup frozen strawberries
  • 1/2-3/4 cup milk (non-dairy or dairy work fine!)

Instructions

  • Place all of the ingredients into a food processor or high speed blender. Add 1/2 cup of milk and process. If the mixture is too thick, slowly add 1 tablespoon of milk until it's blendable. The bottom portion of the mixture will start to become smooth, while the top is still crumbly. Stop the processor, scrape down the sides, and stir. Process until smooth and creamy, about 2 minutes more.
  • Once the mixture is completely blended, serve immediately for a dreamy, creamy texture. Or, for a firmer consistency, spoon into an airtight container and freeze for two hours before serving.
