This Paleo Sweet Potato Skillet is an easy meal that can be completely customized based on what you have in your pantry! It comes together in minutes with 4 base ingredients, but it’s a balanced, delicious dinner that everyone will love!

Cooking, eating + feeding a family have taken on an entirely new level of challenge over the course of the last few weeks. With the onset of the Coronavirus, people are SWEEPING the grocery stores to stockpile their staples…including incredible amounts of toilet paper, ha!

Mark and I are doing our best to not shop. We’ve ordered some things online. We have some things in our pantry + freezer, and we’re doing our best to eat through what we have before we venture out for more.

This 4 Ingredient Paleo Sweet Potato Skillet was born out of ingenuity. Based off on ingredients that we often have + that are easy and inexpensive to get, I threw it together for dinner and Mark went wild. I mean, I slave over the stove for hours on certain recipes, but his fav turns out to be a meal that took all of 4 ingredients + 30 minutes, ha!

How is this Paleo Sweet Potato Skillet Customizable?

The recipe for this meal calls for 4 main ingredients, plus a few spices. I used:

  • Ground Pork
  • Sweet Potato
  • Kale
  • Bone Broth

These 4 items, plus some salt, pepper + onion powder yielded the most incredible paleo skillet meal. However, there are so many ways to switch this up based on what you have in your house.

Ground Pork: Feel free to switch out the ground pork for any other ground meat. Chicken, beef, turkey, venison – all would be delish! And if you don’t have any ground meat? Either slice up some chicken sausages, chicken breasts or even some chopped bacon! Seriously, make it work for you.

Sweet Potatoes: This skillet really does need a starch to bulk it out, but you can totally use whatever type of potatoes you have – white or sweet. Butternut squash would also be really great here!

Kale: Honestly, black kale or dinosaur kale is my favourite green ever. However, regular kale, baby spinach, Swiss chard…any green would be delish here!

Bone broth: I use my own homemade bone broth, but feel free to use any broth you have – even from a stock cube if you need to! Or, equally, feel free to use water. The broth just adds an extra layer of flavour.

The Ease of a Skillet Meal

The other huge pro to cooking a Paleo Sweet Potato Skillet Meal like this during our current season of social distancing (or any time, really) is just how QUICKLY it comes together. There’s barely any work involved, but the payout is just as good.

All you need to do is to chop a few veggies, brown some meat + stir a few things together on the stove. That’s it. Start to finish, it shouldn’t take you more than 30 minutes!

How to Serve

Honestly? Mark and I just ate this meal straight. We scooped it from the pan and enjoyed it straight. But you could totally doctor it up if you want:

  • Add some cheese if you’re not dairy free! (It’s no longer Paleo).
  • Add some avocado on top.
  • Serve it with some fried eggs for breakfast!
  • Mix some mayonnaise with some lemon juice or sriracha for a quick sauce!

This Paleo Sweet Potato Skillet Meal is the real deal. It’s actually the type of food that I most love to cook – simple, easy, delish + REAL FOOD.

It’s perfect for prepping a big batch to keep in your fridge if meal times are challenging with kiddos. It makes for a great breakfast option too with a fried egg on top. It will keep well in your fridge for at least 5 days! Mark and I had it for dinner one night + I munched on it for breakfast for the next few. So great!

Build Your Own Paleo Sweet Potato Skillet

Cook Time 30 minutes
Servings 4

Ingredients

  • 1-2 tbsp oil for cooking – avocado, coconut or olive oil
  • 2 chopped large sweet potatos (could use regular potato too!)
  • 1 lb ground meat – pork, beef, turkey or chicken
  • 4 cups greens – kale, spinach, chard, etc.
  • 1/2 cup water or broth
  • 1 tsp salt
  • 1 pinch pepper
  • 1 tsp garlic powder or onion powder

Instructions

  • Heat a large skillet or dutch oven on the stove to medium/high heat.
  • Cook the ground meat in the skillet, breaking it up, until all of the meat is browned. Remove the meat from the pan and set aside.
  • Add the chopped potatoes to the pan along with the water or broth. Turn the heat down to medium/low and cover the pan with a lid. Cook for 8-10 minutes or until the potatoes are fork tender.
  • Add the meat back to the skillet along with the salt, pepper and onion or garlic powder. Stir to combine.
  • Lastly, pour the kale or other greens on top of the potato/meat mixture. Cover the pan again for 2-3 minutes or until the greens are wilted from the steam.
  • Stir everything together and cook for 2-3 minutes more. Taste and add more salt if needed and serve!

  1. You could also sub rutabaga for potatoes. Made our Hearty beef stew recipe couple of days ago. The one that was Poppy’s favorite. I5 was so good, had it for several meals. 😘🥰
