Build Your Own Paleo Sweet Potato Skillet

This Paleo Skillet Meal is easily adaptable depending on what's in your pantry. But it's also quick, easy, delicious and packed with protein! It will quickly become a family favorite.

Ingredients

  • 1-2 tbsp oil for cooking - avocado, coconut or olive oil
  • 2 chopped large sweet potatos could use regular potato too!
  • 1 lb ground meat - pork, beef, turkey or chicken
  • 4 cups greens - kale, spinach, chard, etc.
  • 1/2 cup water or broth
  • 1 tsp salt
  • 1 pinch pepper
  • 1 tsp garlic powder or onion powder

Instructions

  • Heat a large skillet or dutch oven on the stove to medium/high heat.
  • Cook the ground meat in the skillet, breaking it up, until all of the meat is browned. Remove the meat from the pan and set aside.
  • Add the chopped potatoes to the pan along with the water or broth. Turn the heat down to medium/low and cover the pan with a lid. Cook for 8-10 minutes or until the potatoes are fork tender.
  • Add the meat back to the skillet along with the salt, pepper and onion or garlic powder. Stir to combine.
  • Lastly, pour the kale or other greens on top of the potato/meat mixture. Cover the pan again for 2-3 minutes or until the greens are wilted from the steam.
  • Stir everything together and cook for 2-3 minutes more. Taste and add more salt if needed and serve!
