I’m not sure that you can get any more “comfort” from comfort food than you can with mashed potatoes. Back in the day, before I ever encountered any food intolerances or had any real knowledge about a balanced diet – I could literally eat an entire bowl of mashed potatoes, slathered in butter, as a meal. On its own. Ha!
These days my meals are a bit more sophisticated (mostly), but sometimes a big ole bowl of comfort food is still required.
Enter my Easiest Whole30 Mashed Potatoes + Gravy.
Are Potatoes Whole30?
No matter what type of diet you’re eating, whether it be Paleo/Whole30/Gluten-Free/Grain-Free/Sugar-Free/Dairy-Free/Vegan, you absolutely can make mashed potatoes a part of it. (To all of my Keto friends, you can make a mean substitute with cauliflower – promise!)
The poor potato gets a bit of a bad wrap, but the iron, phosphorous, calcium, magnesium, and zinc in potatoes all help the body to build and maintain healthy bone structure and strength. (Iron and Zinc are also important for the production of collagen – an essential protein!)
They’re also full of fibre (hello, digestive health) + they taste great, which is good for our mental health too, right? It’s all about balance.
As far as the Whole30 is concerned, here’s what they have to say about adding regular, white potatoes into the programme rules in the last few years, “Potatoes of all varieties are in, but fries and chips are not.” They’re behind the vegetable, just not consuming it in “food with no brakes” form, like chips or fries.
What Makes Them the Easiest Whole30 Mashed Potatoes + Gravy?
These Easiest Whole30 Mashed Potatoes + Gravy are the easiest because the ingredients are simple + basic. We’re talking dairy-free milk, potatoes, ghee + salt. SIMPLE. The method is even simpler, boil + mash. DONE!
The gravy? There’s never been an easier gravy in all of the land. Again, the ingredients are basic, basic, basic: broth, salt + arrowroot. Plus, it comes together in one pan in less than 5 minutes. So whether you’re making these easiest whole30 mashed potatoes + gravy for a celebration or for a weeknight meal, they’ll be completely stress-free. Easy, peasy.
However, just because they’re easy + allergen friendly DOES NOT mean that we’ve sacrificed any flavour or texture. I promise that these mashed potatoes are creamy + dreamy + buttery. They’re soft + fluffy, yet hearty + smooth. And the gravy? It’s salty + savoury + the perfect addition to your scoop of mash.
To make these a meal, I’d serve them up alongside of my Apricot Glazed Chicken Thighs or serve the potatoes with this Creamy Bacon Chicken. Or throw, some chicken sausages on top if you’re really in a pinch + can’t be bothered to cook anything else.
These Easiest Whole30 Mashed Potatoes + Gravy will obviously make it to my Thanksgiving + Christmas tables, but I’m also adding them into my regular rotation of meals because they’re THAT easy. Plus, my husband could eat them all day every day.
You’ll want to make these, I promise you. They’re everything your comfort craving heart is looking for. And when you do, I’d LOVE if you’d leave a rating/review in the comments below. It really helps other people find my recipes! Or, I’d love to see your creations on instagram, so be sure to tag me! (And be sure to pin this recipe for later!)
