Easiest Whole30 Mashed Potatoes and Gravy

These creamy, dreamy Whole30 + Paleo Mashed Potatoes are the easiest! They're dairy-free, but loved by kids + adults alike. They're perfect for a celebration or for a weeknight meal.

Ingredients

Mashed Potatoes

  • 2.5-3 lbs peeled and chopped white potatoes
  • 3 cloves garlic
  • 4 tbsp ghee
  • 1 cup cashew milk
  • 1.5-2 tsp salt this depends on your tastes!

Gravy

  • 3 cups chicken or beef stock
  • 2 tbsp arrowroot powder
  • 1 tsp salt

Instructions

To Make the Mashed Potatoes

  • Cover the peeled and chopped potatoes into a large pot and cover with cold water.
  • Place on the stove, bring to a boil and cook for 10-15 minutes or until the potatoes are fork tender.
  • Drain the potatoes + add them back to the hot pot.
  • Add the ghee + milk to the potatoes and mash with a potato masher until you reach your desired texture of creaminess. (You can always add more ghee on top!).

To Make the Gravy

  • In a medium saucepan, heat the stock to boiling.
  • In a separate bowl, mix the arrowroot powder with 2 tbsp water.
  • Slowly add the arrowroot mixture to the boiling broth while whisking.
  • Add the salt + cook until thick! Ladel over the potatoes and enjoy.
