Anyone ever tried to eat more veggies? I know that I am always on the hunt for ways to incorporate more of the fibre and micronutrient dense foods. But honestly, it can be a challenge to eat more vegetables…especially at breakfast. But, these Easy Paleo Breakfast Power Bowls have become my go-to breakfast option. You can prep all of the components in advance + throw them together last minute. Easy peasy, breakfast bowl squeasy.
These breakfast bowls are completely customisable. In fact, they don’t even have to be for breakfast. I definitely have powered through these babies for lunch and dinner on more than one occasion.
They’re delicious.
They’re easy.
They’re full of good for you, REAL DEAL, whole foods.
So, let’s get started:
What goes into an Easy Paleo Breakfast Bowl?
Honestly? Whatever the heck you want to put into your bowl, you can. In this post, I’m going to give you a few suggestions of the items I always prep to throw into mine, but if you want something else, go for it! Seriously! These are meant to make your life + your meals easier + more tasty. So, you do you, boo.
For MY bowls, I always include these things:
- a base of seasoned cauliflower rice
- a leafy green
- some sort of roasted or sautéed veggie (zucchini or cinnamon roasted breakfast carrots are my favs!)
- an egg or two
- avocado
But like I said, my perfect easy paleo breakfast bowl isn’t yours! I love kale in my bowls, but you might prefer spinach. I LOVE spiced cauliflower rice, but you might like yours with simple salt + pepper. So, if you hate roasted carrots, cook up some broccoli or some potatoes to add to yours instead. If you’re not an egg eater, top your bowl with some chicken, some salmon or even some homemade sausage!

How to Prep in Advance for an Easy Paleo Breakfast
Chances are you don’t have a ton of time to throw together a nutritious breakfast every morning, even if you want to. I know that I don’t always + I work from home, ha! That’s why this recipe has become such a go-to for me. I can prep the elements in advance, just reheat them in the morning + top with a freshly fried egg. Boom. Breakfast in less than 10 minutes.
Here’s how I prep:
- cauliflower rice: I actually cook up my cauliflower rice, with the spices + the greens, in advance. Usually, it’s on the weekend before the week. I’ll cook up an entire back + just store it in the fridge. I pop a scoop on the plate in the morning and after a quick blitz in the microwave, we’re good to go.
- greens: I usually cook my kale or spinach in with my cauliflower rice, but you could totally just throw some fresh spinach onto the bottom of your plate or sautée it in with some scrambled eggs too!
- roasted veggies: Over the weekend, or on a weeknight while I’m already making dinner, I throw a tray of veggies into the oven with a splash of oil and salt +pepper. They take 30-40 minutes, but I don’t need to do anything! Broccoli, potatoes, peppers, carrots, Brussel sprouts, zucchini, etc. all reheat well + store easily in the fridge!
- proteins: If you want an egg, but really can’t spare the 3 minutes to fry one up, you could absolutely use a pre-hardboiled one! Or, some reheated chicken or other protein would work too.
- avocado: I wouldn’t recommend you prep this in advance, ha! But, store bought guacamole is great in a pinch if you don’t have a fresh avo or really can’t be bothered to chop one.
The Morning Of
You can absolutely cook this entire recipe from scratch any morning that you’d love a veggie packed breakfast. It’ll still take you less than 15 minutes. But, if you’re like most of us and are trying to save time, here’s how I do it.
- Throw some of your prepped cauliflower rice with greens and roasted veggies onto a plate. Throw it in the microwave to heat!
- Fry up or scramble an egg or two and throw it on top.
- For some fats, top with some avocado or store bought guac.
- Enjoy!
Honestly guys, this breakfast is so easy. It’s so good + it’s all real food. It’ll help you start your day out in the best way + it tastes good too. Oh, and did I mention that it’s Whole30 compliant, gluten-free, dairy-free, soy-free and refined sugar free? Score!

Easy Paleo Breakfast Power Bowls
Ingredients
Cauliflower Rice
- 1 head riced cauliflower
- 2 tbsp coconut oil (could use olive oil or ghee too!)
- 1/2 tsp salt
- 1/2 tsp paprika (optional)
- 1/2 tsp garlic powder (optional)
- 2 tbsp coconut aminos (optional)
- 4 cups kale or spinach (optional)
Roasted Veggies
- veggie of your choice!
- 1-2 tbsp oil or ghee
- salt + pepper, to taste!
Day-Of Components
- egg
- avocado
Instructions
Cauliflower Rice
- Heat a large skillet with the oil until hot. Add the cauliflower rice.
- Sautee for 5-7 minutes and add spices + optional coconut aminos.
- If making in advance, cool until room temperature and store in the refrigerator in an airtight container. If using immediately, portion onto plate + top with the other ingredients!
Roasted Veggies
- Preheat the oven to 400f or 200c. Line a baking sheet with parchment paper.
- Chop your vegetables into similar sized peices. Toss with oil and salt + pepper.
- Depending on your veggie, roast for 20-40 minutes. Vegetables like zucchini or broccoli will take less time. Starchier vegetables like potato or carrots may take a full 40 minutes!
- If making in advance, cool until room temperature and store in the refrigerator in an airtight container. If using immediately, portion onto plate + top with the other ingredients!
Day-Of
- In a small frying pan, cook an egg or two to your desired method! Scrambles or fried (or even poached) are great!
- Make a plate with your cauliflower rice, greens + roasted veggies. Top with the egg(s) and optional avocado or guac!
