This easy paleo greek chicken takes minutes to prepare, but its absolutely jam packed with real food flavor. It’s a meal prep dream or the perfect juicy chicken to serve for dinner on a busy night!
Can we just talk about how amazing it is to open your fridge + to see real food waiting for you…already cooked?! My husband and I both work from home these days, which means we both eat lunch together at home too. And as much as I love Mark, he is the first to admit that he’ll grab a bowl of cereal if there aren’t any easy options. Because my heart for ALL people, including my husband, is to have access to real, whole food options that taste freaking great, I dreamed up this Easy Paleo Greek Chicken + we’ve never looked back!
The words “meal prep” overwhelm quite a lot of people, but they don’t have to! Meal prep doesn’t have to include hours + hours spent in the kitchen preparing breakfast, lunch and dinner options. In our house, meal prep looks a lot more like “food prep”. We’ll throw together a few little bits + pieces so that we have easy building blocks for meals rather than meals.
For example, I’ll prep some frozen fruit for smoothies, roast some veggies + cook up a big ole batch of this Easy Paleo Greek Chicken. This chicken is everything you want it to be – juicy + zingy, spiced + tender. SO GOOD.
Ingredients in Easy Paleo Greek Chicken
Throwing together this Easy Paleo Chicken couldn’t be easier. It doesn’t call for any crazy ingredients, just some regular, household staples like oregano, onions + garlic. The only fresh items you’ll need are the meat + some citrus!
- Chicken – The recipe below is written for chicken breasts, but you could totally use thighs too. You’ll just want to cook them for a bit longer – probably more like 25-30 minutes.
- Lemons – This is such a key ingredient that I really wouldn’t leave it out. You can add in a splash of red wine or apple cider vinegar if your lemons aren’t juice enough!
- Olive or Avocado Oil
- Oregano
- Onion
- Garlic
- Salt
- Pepper
Prepping + Cooking
This recipe really doesn’t require much foresight. You can throw it together and have it in the oven in minutes, but there really is a bit of magic that happens when you leave the chicken to sit in the greek marinade…if you have the time! The lemon juice really tenderizes the chicken + ensures that it stays super juicy when cooked.
I tend to leave my chicken to sit in the marinade as long as I have, but as few as 15 minutes will taste amazing. You can prep it the day before you want to cook it if you want really intense greek flavour.
To cook this Easy Paleo Greek Chicken, all you need to do is to lay the chicken in a single layer on a baking tray or baking dish. It cooks at a high heat, which cooks the chicken quickly, ensuring it stays moist. It really only needs 15-18 minutes!
Once the chicken comes out of the oven, I love to leave it sit until it cools before I store it. However, you could totally eat it straight out of the oven too!
Eating + Storing this Easy Paleo Greek Chicken
If you’re making this Easy Paleo Greek Chicken for the same reason that we so often do – to store it + eat through the week – it should sit and cool completely before you pack it away. I love to slice mine thinly + pack it away in an airtight container. It will keep in the fridge for up to 5 days!
If I’m serving it for lunch, I’ll often pair it with the Best Salad Ever, some Deviled Eggs or a side of Broccoli Salad. I keep them all prepped in the fridge + can make a mix and match plate so quickly!
However, I’m the first to say that this Easy Paleo Greek Chicken is perfect for a weeknight dinner too on the side of some Salt + Vinegar Magic Potatoes! YUM!

Easy Paleo Greek Chicken
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 2 tbsp olive or avocado oil
- 1-2 lemons
- 1 tbsp dried oregano
- 2 cloves minced garlic (*can sub 1 tsp garlic powder)
- 1 tsp salt
- 1 sliced white onion (*optional)
Instructions
- In a large bowl with the chicken, zest and juice the lemons before adding in all of the other ingredients. Mix until everything is thoroughly coated!
- Leave the chicken to marinate for as long as possible – anywhere from 15 minutes to overnight will work.
- Arrange the chicken on a baking sheet and place in a hot oven – roughly 425f or 220 c. Bake for 15-18 minutes. (You can also tell when the chicken is done because it will feel firm to the touch!)
- *If storing for meal prep for the week, leave the chicken to cool completely before slicing thinly and storing in an airtight container in the fridge!
