Easy Paleo Greek Chicken
This Easy Paleo Greek Chicken comes together in minutes, with a few real food ingredients, but tastes like a greek classic! It's perfect for meal prep or for a busy weeknight meal!

- 2 lbs boneless, skinless chicken breasts
- 2 tbsp olive or avocado oil
- 1-2 lemons
- 1 tbsp dried oregano
- 2 cloves minced garlic *can sub 1 tsp garlic powder
- 1 tsp salt
- 1 sliced white onion *optional
In a large bowl with the chicken, zest and juice the lemons before adding in all of the other ingredients. Mix until everything is thoroughly coated!
Leave the chicken to marinate for as long as possible - anywhere from 15 minutes to overnight will work.
Arrange the chicken on a baking sheet and place in a hot oven - roughly 425f or 220 c. Bake for 15-18 minutes. (You can also tell when the chicken is done because it will feel firm to the touch!)
*If storing for meal prep for the week, leave the chicken to cool completely before slicing thinly and storing in an airtight container in the fridge!
