Easy Paleo Greek Chicken

This Easy Paleo Greek Chicken comes together in minutes, with a few real food ingredients, but tastes like a greek classic! It's perfect for meal prep or for a busy weeknight meal!

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 tbsp olive or avocado oil
  • 1-2 lemons
  • 1 tbsp dried oregano
  • 2 cloves minced garlic *can sub 1 tsp garlic powder
  • 1 tsp salt
  • 1 sliced white onion *optional

Instructions

  • In a large bowl with the chicken, zest and juice the lemons before adding in all of the other ingredients. Mix until everything is thoroughly coated!
  • Leave the chicken to marinate for as long as possible - anywhere from 15 minutes to overnight will work.
  • Arrange the chicken on a baking sheet and place in a hot oven - roughly 425f or 220 c. Bake for 15-18 minutes. (You can also tell when the chicken is done because it will feel firm to the touch!)
  • *If storing for meal prep for the week, leave the chicken to cool completely before slicing thinly and storing in an airtight container in the fridge!
