The best cozy fall breakfast EVER, this pumpkin spice baked oatmeal is made with oats, pumpkin, maple syrup, pumpkin pie spice and pecans. It’s dairy-free, gluten-free and SO good.

Who is excited that we’re officially in pumpkin spice season?! I know everyone rolls their eyes + pretends they aren’t ready for fall, but GUYS. This pumpkin spice baked oatmeal is going to change your mind. You’ll be breaking out the flannels, boots + football in no time.

I first had baked oatmeal in the most precious cafe in downtown Harrisburg where I worked before I got married. They served locally sourced coffee, all sorts of homemade loaves of bread + the BEST BAKED OATMEAL I’ve ever had in my entire life. I visited Yellowbird Cafe for well over a year before I ever had something other than the baked oatmeal to eat, ha! This Gluten-Free Pumpkin Spice Baked Oatmeal isn’t anything like Yellowbird’s really (the original had multiple cups of delicious sugar + oil), but it still evokes those same feelings of coffee scented nostalgia.

I’ve created multiple versions of baked oatmeal because I adore it so much: apple pie baked oatmeal, berry baked oatmeal, spiced cranberry baked oatmeal… they never get old!

Why Bake Your Oatmeal?

If you’ve never tried baked oatmeal before, it’s very different than it’s non-baked counterpart. Where regular oatmeal is a bit soupy or stirable, baked oatmeal has a more cakey, set texture. It just feels heartier somehow + even more appropriate for the season.

The other reason that I love baking my oatmeal is that its totally hands off. You simply stir the ingredients together + throw it into the oven. It’s incredibly easy + incredibly good. I call that a breakfast win!

Baked Oatmeal also contains ingredients like eggs to ensure that it’s a bit more filling + perfect for meal prep for a busy week ahead since it makes 6-9 servings at once.

Ingredients in Gluten-Free Pumpkin Spice Baked Oatmeal

One of the best parts of this oatmeal bake is that the ingredients really are so simple + can actually be adjusted or substituted based on what your family loves – WIN!

You’ll need:

  • gluten free oats: if you aren’t worried about gluten, just use normal oats! Just be sure that whether they’re gluten free or not that you choose JUMBO oats or ROLLED oats rather than instant ones. Instant oats tend to turn baked oatmeal into something too gummy for me.
  • pumpkin puree: this is PURE pumpkin rather than pumpkin pie filling with sugar, etc.
  • maple syrup: feel free to swap this out for honey or agave, but make sure you use a liquid sweetener to swap for a liquid sweetener.
  • eggs: if you’re vegan, feel free to swap the eggs for 2 flax eggs (ground flaxseed mixed with water).
  • non-dairy milk: i love using almond or cashew, but oat will work well here too! Or regular milk works fine, it just won’t be dairy-free.
  • vanilla
  • pumpkin pie spice: if you don’t have pumpkin pie spice, try just using cinnamon with a dash of nutmeg if you have it. It’s still delicious!
  • baking powder
  • salt
  • pecans: you can use any nut that you love or leave them out altogether OR swap them for chocolate chips if that’s more your deal

To Make Gluten-Free Pumpkin Spice Baked Oatmeal

Throwing this oatmeal together is really easy + totally customisable. It’s almost as simple as the ingredients that make it up. Here’s how to throw it together in 5 miutes:

  1. Prep: In a large bowl, add the oats, pumpkin pie spice, chopped nuts, salt and baking powder. Stir them together!
  2. Mix: In another bowl, add the eggs, pumpkin puree, maple syrup, milk and vanilla extract. Whisk until combined.
  3. Pour: Pour the wet ingredients into the dry and stir until everything is well coated. Pour into a baking dish.
  4. Bake: Bake for 40 minutes until golden brown on top + set!

In 40 minutes (during which you can sip a PSL or watch the Saturday morning news), breakfast for the entire family (or multiple breakfasts for you) is ready to go!

I love to serve mine hot out of the oven alongside all sorts of yummy toppers like:

  • Maple Syrup
  • Greek or Coconut Yogurt
  • Toasted Coconut
  • Chopped Pecans
  • Whipped Cream (if you aren’t dairy-free!)
  • Extra Pumpkin Pie Spice
  • Warm Milk

Can I prep this ahead of time?

Yes! This Pumpkin Spiced Baked Oatmeal is perfect for meal prepping or to prep before a busy weekend morning with your family. My house only has 2 eaters, but I love to make an entire pan of this for week long enjoyment. Here’s what I do:

  1. Prepare as normal: I mix together the baked oatmeal as normal, then allow it to cool.
  2. Store for optimal freshness: If you’re making this for a party or brunch get together or for your big family breakfast, just leave the oatmeal whole, cover with plastic wrap + refrigerate. If you’re a smaller household who just needs one serving (or two) at a time, go ahead and slice the oatmeal! Then, decide where to store it for your desired timeline. If you’ll be eating the oatmeal in the next week, the fridge will be great. Any longer than that + I’d pop it into the freezer – just be sure to wrap individual slices before freezing or they’ll stick together.
  3. Reheat: Once you’re ready for your oatmeal, simply reheat the oatmeal in the microwave or oven. If you’re reheating the entire pan, 20 minutes in a 350 degree oven will be perfect! If you’re reheating single slices, I love to just pop mine in the microwave for a minute or so. (Just be sure you’re thawing your oatmeal before you reheat it if it’s frozen!)

Gluten-Free Pumpkin Spice Baked Oatmeal

Ingredients

  • 3 cups gluten-free oats (can use normal oats if not gluten-free)
  • 2/3 cup maple syrup
  • 2 eggs
  • 1 cup pumpkin
  • 1 cup almond, cashew, oat or coconut milk
  • 1 tsp vanilla
  • 2 tbsp pumpkin pie spice
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup pecans

Instructions

  • Preheat the oven to 350f or 175c + choose your baking dish! Anything from an 8×8 to 9×13 will work, the resulting slice will just be thicker/thinner depending on the pan size!
  • In a large mixing bowl, combine the pumpkin, maple syrup, eggs, vanilla + milk. Mix until combined.
  • Add the oats, baking powder, pumpkin pie spice, salt + pecans. Mix again until everything is well coated.
  • Pour into the baking dish + bake for roughly 40 minutes or until the oatmeal looks dry on top.
  • Enjoy with extra milk, maple syrup or coconut cream!

    This was a crowd pleaser for my whole family! And highly toddler approved. The pumpkin is not overpowering so it’s one that will definitely be a year round staple for us!
    Also the easiest to pull together of any baked oatmeal recipe I’ve tried!
