Have you ever made my perfect chocolate chip cookie dough bites or maybe my paleo no bake brownie bites? I have both of those recipe memorized – I make them all the time – like maybe once a week?! (Or, I tend to have a batch waiting for me in the freezer for when the cravings strikes! But it’s time to add another legendary recipe to our cookie dough bite repertoire. They are just my absolute favorite thing for when I need a sweet treat or a filling snack! Today we’re mixing big chewy oats with cashew butter, almond flour, some sea salt, real maple syrup and… glorious chocolate chips to make my healthy oatmeal chocolate chip cookie dough bites. YUM!

The Best Healthy Cookie Dough Bite Recipe
To make these healthy oatmeal cookie dough bites, we’re starting with my base recipe that I honestly use for every single one of my cookie dough or brownie batter bites. I found that when I was originally searching for raw cookie dough bites that were gluten-free and dairy-free on the internet, most of them contained chick peas?! I’m sorry, I LOVE a high protein snack just as much as the next girl, but I tried them all + all I tasted was….chick peas. I couldn’t do that to you.
I tried a number of different methods before I stumbled upon my perfect formula for the doughiest, richest, creamiest cookie dough bites + I have never looked back. I use this recipe for ALL of my bites + it’s where I started with these healthy oatmeal chocolate chip cookie dough bites too.
The perfect base, in my opinion, starts with nut butter. Cashew butter is the most neutral flavour, so it tends to be the most like cookie dough to me, but you can really use any nut butter you like! Some liquid sweetener, like maple syrup, a few flours to bind it together, salt, vanilla + chocolate chips. DONE!
If it ain’t broke, don’t fix it, right?
How to make Oatmeal Chocolate Chip Cookie Dough Bites
One of the reasons that I really love this recipe is because it comes together in mere minutes with absolutely no cooking at all – let’s get into it!
- Start by adding the liquid ingredients together – this means the nut butter, maple syrup and vanilla just get a little mix. So simple. Takes 2 seconds basically.
- Once the liquids are combined, just add the dry – so almond and coconut flour + salt!
- MIX! This is the most challenging part of the recipe because it will seem like there isn’t enough moisture for the dough to come together, but I promise you there is! I love to press the dough up against the side of the bowl or just get into it with my hands. Whatever you do, don’t add more liquid. These measurements will get you the most cookie dough like texture if you just trust the process!
- Once your dough comes together, add the oats + chocolate + mix again – your hands work well here too 😉
- Using a cookie scoop or a tablespoon measure, just scoop out the dough ball size you’d like and roll between your hands until it’s a round shape!
- I love to finish mine by sprinkling with extra sea salt, but that’s totally optional! I’m just a salty/sweet fiend!

What am I looking for in a cookie dough bite? I want it to have the texture of the real deal – like, I just took a spoon to some pillsbury, you know? These totally do that. I also want a good ratio of dough to chocolate chips. Again, check! And lastly, I want them to be sweet + salty + taste like a freaking real cookie. I don’t want to know these are gluten-free or dairy-free or refined sugar-free. I want them to taste REAL! Guys, I’ve got you. They’re also:
- super rich and filling
- full of healthy fats and a bit of protein
- low in sugar
- soft + gooey like the real deal
- can be kept out of the fridge for easy snacking
Can I make any substitutions in this recipe?
I know that someone will have this question! So, I want to go ahead and let you know which ingredients you can successfully sub out + for what!
- cashew butter- feel free to sub in any other nut or seed butter that you like! Just be aware that stronger flavours like almond butter or peanut butter will result in a very different tasting oatmeal cookie bite – still delicious, just different!
- maple syrup- honey will work well here too, just be sure you use a liquid sweetener! A sugar won’t work.
- almond flour- if you have an allergy to almonds, cashew flour or ground cashews are your best bet! If you can’t get your hands on it, you can use oat flour and eliminate the coconut flour. The texture will be a bit different, but it will still work!
- coconut flour- if you want to up the protein level here, you can sub in 2 tbsp of your fave protein powder. I use Nuzest + have had great success!
- chocolate- if you’re really not into dark chocolate, use milk! Or white! Or whatever your heart desires – they’ll even still be good without any chocolate (gasp – the horror) if you really don’t love it.
- oats– you could totally use coconut shreds to mimic the flavour of oats if you aren’t able to tolerate oats or gluten-free oats!
How do I store these Healthy Oatmeal Chocolate Chip Cookie Bites
Once made, I love to keep my bites in the fridge. It firms them up a bit + keeps them fresh for a few weeks, although I always polish mine off in like 2-3 days, ha! You can also freeze them, which I love to do for busy weeks when I know I’ll want a sweet snack to grab + go!
It actually is safe to store these are room temperature as well since there aren’t any perishable ingredients, but I wouldn’t do that for more than a week! Just throw them in the fridge or freezer to be safe if you aren’t able to get through them all (I don’t think this will be a problem, ha!).

Healthy Oatmeal Chocolate Chip Cookie Bites
Ingredients
- 1/2 cup cashew butter
- 2 tbsp maple syrup
- 2 tsp vanilla
- 1/2 cup almond flour
- 2 tbsp coconut flour
- 1/4 tsp salt
- 1/3 cup chopped dark chocolate
- 1/4 cup oats
Instructions
- In a large bowl, add the cashew butter, maple syrup and vanilla. Mix until combined.
- Add the almond flour, coconut flour and salt. Mix the dry ingredients into the wet. This will be a challenge at first, and it will appear there isn't enough liquid, but there is! Get in there with your hands or use a spoon to push up against the side of the bowl.
- Once a dough consistency is formed, add the chopped chocolate and oats. Mix with hands until evenly distributed.
- Using a tablespoon or cookie scoop, scoop out a small ball sized amount of dough and roll to shape.
- Optional: Finish with sea salt and enjoy!
