Healthy Oatmeal Chocolate Chip Cookie Bites
These Healthy Oatmeal Chocolate Chip Cookie Bites are sweet, tender and full of cookie dough flavor. They're gluten-free, dairy-free and refined sugar-free, but taste like the childhood classic cookie!

- 1/2 cup cashew butter
- 2 tbsp maple syrup
- 2 tsp vanilla
- 1/2 cup almond flour
- 2 tbsp coconut flour
- 1/4 tsp salt
- 1/3 cup chopped dark chocolate
- 1/4 cup oats
In a large bowl, add the cashew butter, maple syrup and vanilla. Mix until combined.
Add the almond flour, coconut flour and salt. Mix the dry ingredients into the wet. This will be a challenge at first, and it will appear there isn't enough liquid, but there is! Get in there with your hands or use a spoon to push up against the side of the bowl.
Once a dough consistency is formed, add the chopped chocolate and oats. Mix with hands until evenly distributed.
Using a tablespoon or cookie scoop, scoop out a small ball sized amount of dough and roll to shape.
Optional: Finish with sea salt and enjoy!
