Healthy Oatmeal Chocolate Chip Cookie Bites

These Healthy Oatmeal Chocolate Chip Cookie Bites are sweet, tender and full of cookie dough flavor. They're gluten-free, dairy-free and refined sugar-free, but taste like the childhood classic cookie!

Ingredients

  • 1/2 cup cashew butter
  • 2 tbsp maple syrup
  • 2 tsp vanilla
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 tsp salt
  • 1/3 cup chopped dark chocolate
  • 1/4 cup oats

Instructions

  • In a large bowl, add the cashew butter, maple syrup and vanilla. Mix until combined.
  • Add the almond flour, coconut flour and salt. Mix the dry ingredients into the wet. This will be a challenge at first, and it will appear there isn't enough liquid, but there is! Get in there with your hands or use a spoon to push up against the side of the bowl.
  • Once a dough consistency is formed, add the chopped chocolate and oats. Mix with hands until evenly distributed.
  • Using a tablespoon or cookie scoop, scoop out a small ball sized amount of dough and roll to shape.
  • Optional: Finish with sea salt and enjoy!
