Seasonal Treats

In season from late July to early November, we’re very much right in the middle of peak apple season when locally grown apples are plentiful + cheap, sweet + crisp.

Because seasonal produce is harvested at its prime, the fruit is so much fresher! It doesn’t need to travel long distances (eco win!) or be ripened at home. It just tastes better. I promise!

Baked apples are exactly what they sound like – they’re apples that you bake, ha!

But when you bake an apple, something magical happens. Imagine the inside of an apple pie, but without any of the chopping or pastry making.

The apples become slightly soft, but maintain their textural crunch. The sweetness of the apples intensifies when they’re in the oven too, the sugar almost caramelises.

Even without the crumble filling, baked apples are good. But throw some sweet, crunchy filling into the baked apples and hot dang. These Paleo Cinnamon Crumble Baked Apples babies will blow your seasonal socks off.

Imagine the best parts of an apple crumble or an apple crisp – the cinnamon scented, nut studded, buttery, crispy topping. It is like food nirvana. I could eat it all dang day.

But, sometimes making an entire crumble or pie is too much work. And so, we’re taking the topping and stuffing it into apples. It’s SO much easier, but it tastes exactly the same. Heavenly.

It couldn’t be simpler – it’s literally throwing things into a bowl + mixing them up. That is the extent of work required for these Paleo Cinnamon Crumble Baked Apples. Minimum effort, maximum pay off.

Once the filling/topping is mixed together, you simply load it into each apple half and bake it. That is really it. It’s so, so simple, but looks (and tastes) like you’re a culinary genius.

Gluten-Free Cinnamon Baked Apples

These Paleo Cinnamon Crumble Baked Apples are Paleo, they’re gluten-free, grain-free, dairy-free, refined sugar-free and soy-free. But the best part is, you would never know (neither would your guests or kids or friends). My husband tasted a bite of these + quickly replied, “BABE, these are so good.”

You could absolutely prep these in advance + simply reheat them to serve for an easy weeknight dessert or when you need a late night snack 😉 They’d be the perfect post-meal treat to serve after a big ole bowl of this Steak + Sweet Potato Chili – perfect fall night!

Paleo Cinnamon Crumble Baked Apples

Prep Time 10 minutes
Cook Time 30 minutes
Servings 2 servings

Ingredients

  • 2 apples
  • 1/3 cup almond flour
  • 3 tbsp coconut sugar
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1 pinch nutmeg
  • 1/3 cup chopped pecans (feel free to use any nut you like!)
  • 3 tbsp melted ghee (can use coconut oil too!)

Instructions

  • Preheat the oven to 350f or 175c and grab a baking pan that will fit 4 apple halves.
  • Cut the apples in half. Using a spoon, scoop out the seeds and a bit of the flesh to form a cavity in the center of each apple half. Set aside.
  • In a small bowl, combine all of the dry ingredients (almond flour, coconut sugar, salt, cinnamon, nutmeg and pecans) and stir together. Pour in the melted ghee or coconut oil and mix unti the mixture looks like sand.
  • Arrange the apple halves on the baking pan so that they sit flat. Spoon an equal amount of the mixture into each apple half.
  • Bake the apples for roughly 30 minutes until the apples are tender/crisp and the filling is crunchy. Serve with yogurt (greek or coconut) or topped with ice cream!
