Servings: 2 servings
- 2 apples
- 1/3 cup almond flour
- 3 tbsp coconut sugar
- 1/8 tsp salt
- 1/2 tsp cinnamon
- 1 pinch nutmeg
- 1/3 cup chopped pecans feel free to use any nut you like!
- 3 tbsp melted ghee can use coconut oil too!
Preheat the oven to 350f or 175c and grab a baking pan that will fit 4 apple halves.
Cut the apples in half. Using a spoon, scoop out the seeds and a bit of the flesh to form a cavity in the center of each apple half. Set aside.
In a small bowl, combine all of the dry ingredients (almond flour, coconut sugar, salt, cinnamon, nutmeg and pecans) and stir together. Pour in the melted ghee or coconut oil and mix unti the mixture looks like sand.
Arrange the apple halves on the baking pan so that they sit flat. Spoon an equal amount of the mixture into each apple half.
Bake the apples for roughly 30 minutes until the apples are tender/crisp and the filling is crunchy. Serve with yogurt (greek or coconut) or topped with ice cream!
