Paleo Brownie Bites

Friends, I’m going to be real with you. Sometimes, a girl just needs a little bit of chocolate. Am I right!? (Guys, don’t worry, I see you too, but we girls have a special relationship with this stuff, okay?)

In all honesty, I have days like that a lot. And while I love a good chunk of plain dark chocolate (the darker, the better, really) sometimes I want to treat myself to something a little more special.

These Paleo No Bake Brownie Bites hit the spot every dang time.

Why “Paleo” Brownie Bites?

If you’ve been following along for any period of time, you’ll know that I’m really careful about what I put into my body. Not all of the time, obviously, because I’m human + there’s grace…but most of the time, I’m really careful. My body is working really hard to keep itself healthy + so I want to honour that with what I feed it.

However, I also know that there’s food that’s really, really good for your soul health, your heart health + your mental health. Chocolate is one of those foods for me.

Paleo No Bake Brownie Bites

By using paleo based ingredients to make these Paleo No Bake Brownie Bites, I can make sure that I don’t consume any gluten or dairy (they’re hard on Endometriosis), but I can STILL have a decadent treat.

The Essential Ingredients

The base of the brownie bites is really simple: nut butter. Nut butter is going to give us the most INCREDIBLE soft, pillowy texture when its combined with the other ingredients. Cashew butter is my fav to get the most “true” to brownie flavour, but I’ve also tried it with almond + peanut butter, and they’re all winners.

To sweeten, I used two tablespoons of maple syrup (yay for low sugar!), but you could also use honey if you want. It won’t alter the flavour too drastically, but it may make for a slightly stiffer texture. (A lot of no bake bites use dates to sweeten, but I wanted these bites to have a creamy, soft texture.)

A little vanilla extract, if you like + that’s it for wet ingredients!

Gluten Free Brownie Bites

The dry ingredients are just as simple + basic. The main player is almond flour. It’s gluten + grain free, plus it’s high in healthy fats to make these babies a bit more satisfying than a traditional sweet treat. The almond flour mixed with the nut butter makes these taste + feel “exactly like a perfect bar”. (Not my words, but I’ll take it!)

To turn these from plain bites into “brownie bites”, we need to add a little chocolate. I prefer to use Cacao for its higher iron + magnesium content, but any type of regular cocoa would work here too.

Lastly, sprinkle in a bit of salt + mix! The mixing is the most important part. It’s going to seem like there isn’t enough liquid for them to come together, but don’t give up + don’t add any more! I promise, just keep mixing. Scrape the bowl a bit if you have to, but just hang in there. It becomes the most INCREDIBLE texture when it’s done. It shouldn’t take you more than a minute.

The Final Touches of the Paleo No Bake Brownie Bites

The add-ins to the Paleo Brownie Bites are all you. The sky is your limit! I keep mine really simple + add some chopped chocolate and a sprinkle of sea salt, but you could go a million different directions here.

  • Chopped Nuts
  • Toasted Coconut
  • Chopped Peanut Butter Cups
  • Dried Fruit
  • Mint candies
  • Candied Ginger
  • Orange Zest

So, have some fun if you want, or be like me + go with the tried + true. Dark Chocolate chunks + sea salt. I can promise you will not be disappointed with that combo.

No Bake Perfect Bar Brownie Bites

Storing the Paleo Brownie Bites

Once the dough is all mixed together, you can form them into whatever shapes you like. You could make bars or roll them into bite sized balls like I do. Or, feel free to eat the batter straight from the bowl with a spoon because #happiness.

These babies keep in the fridge for a week or so, but ours never last longer than a day or two. IF you can salvage a few to squirrel away for later, they’ll stay good in the freezer for up to 6 months. (And actually, I adore these straight from the freezer when I need a late night treat).

Paleo No Bake Brownie Bites

Ingredients

Wet Ingredients

  • 1/2 cup cashew butter (or almond or peanut!)
  • 2 tablespoons maple syrup (or honey)
  • 1 tsp vanilla extract (optional)

Dry Ingredients

  • 1/2 cup almond flour
  • 2 tablespoons cacao powder or cocoa powder
  • 1/2 tsp salt
  • 1/3 cup chopped chocolate or chocolate chips!

Instructions

  • In a medium sized bowl, stir together the nut butter, maple syrup + vanilla extract.
  • Once the wet ingredients are combined, add the almond flour, cacao + salt. Mix until everything comes together in one ball of "dough". It can be a bit stiff, but stick with it! Don't add any more liquid, just keep stirring, it'll come together – promise!
  • Lastly, stir in the chocolate chips or chunks.
  • Form into balls + top with sea salt flakes OR eat straight from the bowl with a spoon. Enjoy!

I’d throw in a tsp of espresso powder or even a tablespoon of instant coffee in with the dry.
