This Paleo Salted Caramel Latte is simple, sweet, perfectly salty + SO GOOD. It’s dairy free + refined sugar free, but tastes like such a treat.
Coffee is always a good decision, right? It is literally the best part of getting out of bed in the morning: a steaming, frothy, strong coffee. Holy moly, I’m swooning just thinking about it. And as much as I love keeping it basic (oat milk + espresso), this Paleo Salted Caramel Latte makes me feel like I should be paying $6 for my morning cup. (I’m looking at you Starbucks…)
Over the last few months, I created a few quick + easy paleo coffee syrups (the pumpkin spice was really popular), but I wanted an option that wasn’t exactly seasonal. I wanted one that I’d want to drink every.single.morning or when I wanted an over the top treat on the weekend.
And this Paleo Salted Caramel Latte is it. It requires a bit more effort up front, but it makes enough for 10-12 lattes, so you can hang onto it for a few weeks + have easy mornings that are perfectly (salted) sweet.
The Ingredients in this Paleo Salted Caramel Latte
One of the joys of this paleo salted caramel latte is how freaking simple it is. I know people say that all of time + it isn’t true, but this actually is. It’s like 6 ingredients + requires no effort except a bit of stirring. Here’s what I used:
For the Salted Caramel Sauce
- full fat coconut milk: it really does need to be full fat coconut milk, I wouldn’t try swapping it for another milk. I promise you can’t taste the coconut once it’s in the latte!
- coconut sugar: again, I wouldn’t swap this out. The coconut sugar lends the most incredible notes of caramel that you wouldn’t get from another sweetener.
- salt: because duh. You can totally leave this out, but it definitely adds something special
- vanilla extract
For the Latte
- the finished salted caramel syrup
- strong coffee or espresso
- desired milk
Making the Salted Caramel Syrup
Making the Paleo Salted Caramel Latte takes seconds once the syrup is made, but we do spend a bit of time on the front end making the salted caramel syrup. But don’t worry, while it takes a bit of time, there is like ZERO work involved + then you’re set up for an entire week (or two) worth of lattes.
Honestly, the “making part” of this syrup just means that we throw some coconut milk, coconut sugar and salt into a saucepan + let it do its thing. It really does need to simmer for 45 minutes to thicken, but you can rest or take a walk or a bath or feed your kiddos or whatever in the meantime.
Once it’s finished cooking, just stir in some vanilla to really put out over the top. We add the vanilla after its off the heat so that it doesn’t just evaporate out!
Putting the Latte Together
Once the salted caramel syrup is made, the latte couldn’t be easier. Simply add your fav espresso or a cup of strong coffee to a cup with 1-2 tablespoons of the syrup! The amount of syrup is totally up to you because I know coffee preferences are sacred 😉
Once I stir the syrup into my coffee, I just top it with dairy free milk that I hear and foam, but again, you do you!
The finished latte is a DREAM: creamy, sweet, perfectly salty + tinged with the golden notes of caramel. You are going to love it.
Just save the extras in the fridge! They’ll keep in there for a few weeks, but I doubt they’ll last that long, ha! Just pull it out any time of day you need a little pick-me-up.

Paleo Salted Caramel Latte
Ingredients
Salted Caramel Syrup
- 1 can full fat coconut milk
- 1/2 cup coconut sugar
- 1 tsp salt
- 1 tsp vanilla extract
Latte
- 1 espresso shot or cup of strong coffee
- desired amount of non-dairy milk
Instructions
To make the Salted Caramel Syrup
- Add the coconut sugar, coconut milk and salt to a saucepan.
- Place over medium heat and bring to a boil.
- Once it reaches a boil, immediately turn the temperature to low and allow to simmer for 45 minutes until thickened.
- Once it's off the heat, stir in the vanilla extract.
To make the latte
- Simply add 1-2 tablespoons of the salted caramel syrup to a glass with coffee or espresso.
- Stir together and top with desired amount of hot/frothed milk. Enjoy!
