The most popular recipe that I’ve ever shared on Jessica Eats Real Food is for my Salt + Vinegar Magic Potatoes. It hold a monopoly for most loved/shared recipe by a mile and for good reason. My Salt + Vinegar Potatoes kick some serious side dish booty. If you haven’t given that recipe a try, you are seriously missing out.

But, at risk of sounding contradictory, these potatoes are even better, which I didn’t even know was possible until I tasted them.

I set out to create a sister-friend to my most loved recipe, and created its much hotter, much older sister-friend. GUYS, these sweet + salty magic sweet potatoes are the perfect mix of flavours. They’re tender and golden and I-just-cant-stop-eating-them good.

I know you want to make them. Really, you do.

What Makes these Sweet + Salty Sweet Potatoes Magic?

If we’re really honest, sweet potatoes are amazing on their own. They’re just good. They’re soft + sweet, tender + filling. I can’t imagine that there are too many ways to screw up a sweet potato. However, there are absolutely ways to make them better, and this is the best sweet potato recipe that I have ever tasted. Here’s why:

  • The sweet potatoes are cubed into perfect bite sized chunks. Wedges are great + so are whole baked potatoes, but there’s something extra about having the perfect bite sized piece.
  • They’re coated in coconut oil, which in my opinion, is the only way to roast a sweet potato. Even if you don’t like coconut, or think you don’t like coconut, try this, PLEASE. There’s something about the coconut oil that enhances the sweetness of the potato without being overpowering.
  • Maple syrup + sea salt come together in the most divine flavour marriage ever of mankind in all of history. And I’m not exaggerating even a little bit. You know that incredible combo of pretzels and chocolate? Or kettle corn? Sweet + salty just WORKS, and it’s doing its thing on these potatoes. Trust me.
  • To really tip them over the edge, we’re adding cinnamon. And in combination with the salt and the sweet of the maple syrup, this spice really is the clincher. I wouldn’t say that it’s the magic (that’s all the salty/sweet), but I would say that its the magic wand, maybe?

The other “best part” about this recipe other than the fact that it tastes like magic is that it comes together in minutes. The prep work is literally a bit of peeling, chopping + tossing. You need one bowl and one spoon, max. It couldn’t be easier! Once you’ve mixed the ingredients together, all you need to do is to chuck them onto a lined baking sheet (trust me, the maple syrup caramelises, so you really will want your pan to be lined unless you love hellacious dishes) and pop them into the oven. 45 minutes of free time later, you’ll have the most tender, golden, caramely, salty, wonderful potatoes of your life.

These potatoes are really great for meal prep. Honestly, when I prepped them for the blog, I kept a bowl of them in the fridge and tossed them into tons of random recipes (including my single serving frittata) and even ate them straight out of the bowl like candy. And mommas, your kids will be FOOLED. If they don’t like veggies or healthy foods, I promise that they’ll love these.

I love serving these potatoes to my husband + eating them myself because I know exactly what’s in them. They’re made from 100% real food ingredients. There’s no dairy, no gluten, no grains, no soy, no refined sugar, no vegetable oils, etc. Just real, wholesome food that tastes dang good.

Sweet + Salty Magic Sweet Potatoes

Prep Time 10 minutes
Cook Time 45 minutes
Servings 4 people

Ingredients

  • 2 lbs peeled and cubed sweet potato
  • 2 tbsp melted coconut oil (could use ghee, butter or another oil)
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 1/2 tsp sea salt

Instructions

  • Preheat the oven to 400f or 200c. Line a baking sheet with parchment paper.
  • Toss together the cubed potatoes, melted coconut oil, maple syrup, salt and cinnamon.
  • Spread out evenly on a baking sheet and bake for 45 minutes, tossing halfway through.
  • Enjoy the sweet, salty deliciousness!
