Whole30 Chicken Caesar Sheet Pan Meal

I have to be honest, guys. I work from home. And so, I am fully aware that I have more time than the average man or woman to prep dinner if I want it. I can chop veggies on my lunch break + I don’t exactly have a long commute to manage before I walk through the door…and then have to plan dinner. Ugh.

That being said, I’m still human. And as much as I normally love cooking, there are plenty of nights where I’m not sure I can be bothered. That’s where recipes like this Whole30 Chicken Caesar Sheet Pan Dinner come in.

What’s a “Sheet Pan Meal”?

A sheet pan meal is exactly what it sounds like. It’s an entire meal that’s cooked on one pan + it’s God’s gift to stressed out singles + families alike. It allows for you to cook a meal for every person in your family, or enough meals for one for a few days, with only one dirty pan at the end.

And, it cooks in the oven on its own.

And it’s delicious. Need I say more?

You guys know that I love the Whole30. I credit this program for shaping the way that I think about food + how it affects my body. I don’t believe that it’s right for everyone (especially if you have a disordered relationship with food already), and you have to be in the right headspace because it is work. However, it’s an incredible way to eat, to learn about your body + to try lots of the food tastes freaking good + is great for you too.

This Whole30 Chicken Caesar Sheet Pan Meal is absolutely one of the meals that tastes bomb – Whole30 or not.

This meal is composed of some very basic components:

  • Chicken Thighs
  • Cabbage
  • Homemade Whole30 Caesar Dressing

To start this meal, we’re simply going to cut our cabbage into steaks (basically thick slices) and throw them onto your sheet pan. In between the cabbage, nestle some chicken thighs – you could use breasts too, but they may dry out a bit since we’re baking them!

Next, drizzle the entire thing with some avocado oil + sprinkle it with salt and pepper. Throw it in the oven + move on to the best part…the dressing!

I know I’ve said things like this before, but guys, this Caesar dressing will CHANGE YOUR LIFE.

I honestly made it up by throwing things in the blender that I know go into caesar dressing + it blew my mind. I did a happy dance in the kitchen + I’ve been dousing it on everything that I make.

Like a lot of dairy-free, creamy sauces, the base of this dressing is cashews. Blended with flavour bombs like garlic, lemon, mustard and…wait for it…anchovies, this dressing IS IT.

Now, I know what you’re thinking + you’re freaked out by the anchovies, but guys, you can’t leave them out. They don’t taste fishy at all, they just add the most amazing umami, traditional caesar flavour. Plus, they’re uber cheap + full of healthy omega 3 fats + natural vitamin D! Just TRUST ME.

The other best part about this dressing, other than the taste? It’s made by throwing a bunch of stuff into a blender. That’s it. No hard work involved + you can totally do it while the other stuff is in the oven.

Dairy-Free Chicken Caesar

Once your chicken + cabbage bakes, the only remaining thing to do is to spoon the Whole30 Caesar Dressing over the top + enjoy! If you wanted to make this a bit more of a carb heavy meal, feel free to add some potatoes to the pan before you toss it with oil + put in the oven. But either way, its an entire meal in one + so, so easy!

This meal is dairy-free, gluten-free, soy-free, refined sugar-free, Paleo + Whole30, but you won’t miss ANY of them.

Whole30 Chicken Caesar Sheet Pan Meal

Prep Time 10 minutes
Cook Time 35 minutes
Servings 4

Ingredients

  • 1 head green cabbage
  • 1 lb chicken thighs
  • 2 tbsp avocado, olive or coconut oil
  • salt + pepper, to taste

Caesar Dressing

  • 1 cup cashews, soaked
  • 3 cloves garlic
  • 1 lemon, juiced
  • 1 tsp dijon mustard
  • 2 anchovy fillets
  • 3/4 cup dairy-free milk
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

  • Before anything else, add the cashews to a bowl + cover them with boiling water. Set aside.
  • Next, preheat the oven to 400f/200c and line one large baking sheet with parchment paper.
  • Next, take one head of green cabbage. Peel off the 2 outer leaves that can be a bit tough + stand the cabbage on its core. Slice thick slices, all the way through the cabbage so that you end up with "steaks" or thick rounds (1/2-1") that are held together by the core.
  • Arrange the cabbage steaks + chicken thighs on your baking sheet. Drizzle with oil + sprinkle with salt + pepper.
  • Bake for 35 minutes or until the chicken + cabbage are golden brown.
  • While the chicken + cabbage bake, drain the cashews + throw them with all of the other dressing ingredients into a high speed blender or a food processor and process until thick + creamy.
  • Once the chicken + cabbage are finsihed baking, drizzle generously with the dressing + serve!
