Juicy, rich and fresh, these Whole30 Lamb and Mint Burgers are so simple to make, but incredibly delicious. They come together in minutes + cook up into the most crispy, tender, flavourful burgers you’ve ever had!
Growing up in the United States, I just didn’t really eat much lamb. It’s not that I didn’t like it, I just was never exposed to it much. My family cooked a LOT of venison + when we could afford it, beef. But lamb? I honestly didn’t try it until I was in my 20’s + married to a Brit! We were in Paris when I tried a braised lamb shank + couldn’t believe the richness of flavour that I’d been missing. I’ve been loving on lamb ever since in all sorts of recipes, but most recently: these Whole30 Lamb and Mint Burgers.
These burgers were really born out of a desire to eat a little bit less chicken, ha! We are huge chicken fans in this house, but it does get a bit boring. Ground beef is great, but sometimes lacks flavour. And so, I ordered some ground lamb from a local farm + set out to create a simple, easy recipe that really featured the meat.

Ingredients in Whole30 Paleo Lamb and Mint Burgers
These Whole30 Lamb and Mint Burgers are the easiest, most delicious burger that I’ve ever made at home. The ingredient list is simple, which almost makes these burgers even better!
- Ground Lamb: I chose to use locally sourced, pasture raised lamb, but I’m sure you can find a really high quality meat at the local grocery store too.
- Fresh Mint: Mint + lamb are a match made in flavour heaven. You might be able to swap the fresh mint out for 2 teaspoons of dried mint, but if you can, GET FRESH!
- Red Onion
- Garlic
- Salt
- Pepper
And that’s it! These burgers really are that simple. Aside from the burgers, the topping options are limitless! Here are a few of our favs:
- Tomato
- Red Onion
- Avocado Oil Mayonnaise
- Lettuce
- Pickles
- Mustard
Cooking the Burgers
In my personal opinion, the best part of these Whole30 Lamb and Mint Burgers – besides their incredible taste – is the crispy outside, but tender + juicy inside. Like SERIOUSLY, check that crunch!
You really can cook these burgers in a number of different ways + still achieve the perfect doneness + texture. So, don’t worry if you don’t have a grill! Use what you have!
Once you mix together the ingredients in these burgers, divide the mixture into quarters + form them into patties. Press the burgers in the centre, placing a divot right in the middle. The burgers will expand when cooked – this helps to keep them flat!
To cook, take your patties and place on:
- A cast iron skillet (or other skillet), at medium/high heat
- Onto a preheated grill
- Into a 400f/200c oven
These burgers take anywhere from 5-7 minutes per side to cook (longer in the oven, shorter on the grill or in a pan)!
To serve these Whole30 Lamb and Mint Burgers, we love to wrap ours in lettuce wraps + top with all of our favourite fixings. However, if you aren’t eating a Paleo, Whole30 or Keto diet, these are divine in a burger bun! They’re also great served as part of a burger bowl or salad. You really can’t go wrong!
To serve alongside, I love to cook up some oven fries. Or if I’m feeling really extra, I’ll whip up a batch of my Salt + Vinegar Magic Potatoes as some yummy wedges. The two go surprisingly well together.

Whole30 Lamb and Mint Burgers
Ingredients
- 1 lb ground lamb
- 1/4 cup chopped fresh mint
- 1/2 red onion, finely diced
- 2 cloves garlic, finely minced
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- In a large bowl, combine all of the ingredients. Mix with fork (or your hands) until well combined.
- Divide the burger mixture into 4 equal patties and press a divot into the middle of each. (The middles will expand when cooked).
- Preheat a large skillet (cast iron works best!) to medium high heat. Cook each burger for 5-6 minutes per side. This can also be done on a grill if you’re able!
- Let the burgers rest for 5 minutes when they finish cooking + serve!
