Can I let you in on something really sad? My husband doesn’t eat fish. I KNOW. It’s literally one of my favourite foods in the entire world. And so, on a rare occasion, when I decide to splurge on fish for myself, I always go salmon. Wild salmon is my all time favourite protein + this Whole30 Pecan Crusted Salmon is one of the best ways I’ve ever found to make it.

This salmon comes together in minutes + has the most incredible zesty crunch on the outside with a tender, flaky inside. I don’t know what there is not to like. It’s perfect – oh, and it’s Paleo, Whole30 + Keto which means nearly any dietary preference can enjoy this baby.

What you’ll need for this Whole30 Pecan Crusted Salmon

Throwing this salmon together is so quick + that’s largely because of the tiny ingredient list. Here’s what you’ll need:

  • Wild salmon – feel free to use any salmon you can get your hands on, I just prefer wild – it’s more nutrient dense + has a more sustainable supply chain. But anything works. Feel free to use a salmon side like I did here or to use a group of smaller fillets.
  • Avocado Oil Mayonnaise – Just 2 tablespoons! Feel free to use any mayo you love.
  • Mustard: Whole grain is preferable, but dijon works too!
  • Pecans
  • Salt + Pepper

I know it might seem like there aren’t enough ingredients here to make something fabulous, but I promise that story is FALSE. This salmon packs so much flavour, texture and satisfaction. Like I said, this Whole30 Pecan Crusted Salmon is perfect.

Putting this meal together

If the ingredient list wasn’t proof enough that this meal is the simplest, I promise the steps to prepping it are EVEN easier.

  1. Season the salmon.
  2. Mix the mustard + mayo + spread over the salmon.
  3. Sprinkle pecans + bake!

That’s literally it! It’s basically the meal time dream with minimal effort + maximum payouts. If you’re a busy momma or getting home from a long day of work, this is totally the type of meal you’d be able to throw on the table without even really thinking about it.

Paleo Pecan Crusted Salmon

To make this salmon into a meal, I love to serve it up with some sides like my Paleo Salt + Vinegar Magic Potatoes or with a big ole plate of my Harvest Hash. It would be SO GOOD on top of a salad or with some simple green beans or roasted broccoli.

This Whole30 Pecan Crusted Salmon is an ideal weeknight meal, but it’s also beautiful enough to serve when your friends come over. It will keep in the fridge for a day or two, but I’ll be surprised if you have leftovers 😉

Whole30 Pecan Crusted Salmon

Prep Time 10 minutes
Cook Time 15 minutes
Servings 4 servings

Ingredients

  • 1 lb wild caught salmon side (**or 4 fillets)
  • 2 tbsp avocado oil mayonnaise
  • 2 tbsp whole grain mustard
  • 1/2 cup pecans, roughly chopped
  • 1/2 tsp salt
  • 1 sprinkle pepper

Instructions

  • Line a baking sheet with parchment paper + preheat the oven to 400f/200c.
  • Lay the salmon skin side down on the baking parchment + season with salt and pepper.
  • In a small bowl, mix together the mustard + mayonnaise. Spread the mixture in a thick, even layer over the fish.
  • Sprinkle the chopped pecans all over the salmon, lightly pressing down so that they stick to the mayo/mustard mixture.
  • Bake for 12-17 minutes or until the salmon is cooked through and the pecans are lightly golden brown.

    Wow wow wow. So simple and so delicious. I actually subbed the avocado Mayo with Veganaise and used honey mustard from Whole Foods. Was fantastic. Already made it twice.
