Ingredients

  • 1 lb wild caught salmon side **or 4 fillets
  • 2 tbsp avocado oil mayonnaise
  • 2 tbsp whole grain mustard
  • 1/2 cup pecans, roughly chopped
  • 1/2 tsp salt
  • 1 sprinkle pepper

Instructions

  • Line a baking sheet with parchment paper + preheat the oven to 400f/200c.
  • Lay the salmon skin side down on the baking parchment + season with salt and pepper.
  • In a small bowl, mix together the mustard + mayonnaise. Spread the mixture in a thick, even layer over the fish.
  • Sprinkle the chopped pecans all over the salmon, lightly pressing down so that they stick to the mayo/mustard mixture.
  • Bake for 12-17 minutes or until the salmon is cooked through and the pecans are lightly golden brown.
