Quick Cashew Cream Sauce

This Cashew Cream Sauce is quick, easy + tastes like a Paleo and Whole30 Alfredo sauce. It's dairy-free, grain-free, soy-free, but is still dreamy, creamy + full of healthy fats. Your entire family will love it!

Ingredients

  • 1 cup cashews
  • 1-1.5 cups chicken stock or almond milk
  • 1 tsp salt
  • 2 cloves garlic
  • 1 lemon, juiced
  • 2-4 tbsp nutritional yeast optional - I don't use this, but feel free to add it for a more cheesy flavour.

Instructions

  • Cover your cashews in boiling water. Leave to sit for 30 minutes.
  • Drain your cashews and add them to a high speed blender or food processor.
  • Add your salt, stock or milk + garlic to your cashews. Add the juice from your entire lemon to the mix. (Add your nutritional yeast here if you're using it!)
  • Blend for 1-3 minutes until your cream sauce is smooth. This will depend on the speed of your appliance. Stop and scrape down the sides as needed.
  • Toss your sauce with your veggies or grains of choice. Heat together on the stove until the sauce is heated through and thick.

Notes

Nutritional Yeast is a great way to add a cheesy flavour without using any dairy. However, I make this sauce without it and adore it as is!
Please note, this sauce does thicken quite considerably when cooked or heated. When you toss it with hot pasta or rice or veggies, it WILL thicken, so don't worry if its a bit runny in your blender.
