Banana Snacking Bread
This Banana Snacking Bread is made with whole grains + no added sugar. It's a delicious satisfying snack, perfect served with nut butter or topped with berries.

- 4 ripe bananas
- 2 eggs
- 1/4 cup milk can use non-dairy or dairy milk
- 1/4 cup melted coconut oil any liquid oil will work!
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup all purpose flour
- 3/4 cup whole wheat flour
Preheat the oven to 325f or 165c. Grease the bottom and sides of a loaf tin. (I also line mine with parchment paper to ensure the bread doesn't stick.)
Mash your bananas until they're like a smooth puree.
Add eggs, vanilla, oil + milk to your banana. Mix well.
Add spices. baking soda + salt. Stir to combine.
Lastly, add in other flours. Mix until JUST incorporated. Over-mixing will result in a tough loaf.
Pour into the prepared loaf tin and bake for 50-55 minutes, until the top is golden and a toothpick comes out clean when inserted into the centre.
Remove the bread from the tin and leave to cool on a cooling rack before slicing.
Gluten-free: To make this bread gluten-free, simply swap out the whole wheat + all purpose flour for a gluten-free flour blend.
Vegan- If you'd like the make this vegan, I believe that swapping the eggs for flax or chia eggs would work!
4 mashed bananas should equate to roughly 1 cup's worth of banana when measured.
