Paleo Sweet Potato Brownies

These Sweet Potato Brownies are a lightened up version of the classic. They're paleo, grain-free, dairy-free + delicious! They'll satisfy your chocolate craving without weighing you down.

Ingredients

  • 2 eggs
  • 1/2 cup coconut sugar
  • 2 tbsp almond butter
  • 2 tbsp melted coconut oil
  • 1/3 cup cocoa
  • 1 cup mashed, cooked sweet potato
  • 1 tbsp coconut flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1/2 cup chocolate chips

Instructions

  • Preheat your oven to 350f or 175c and line an 8x8 pan with parchment paper.
  • In a large bowl mix combine almond butter, melted coconut oil, eggs, vanilla + coconut sugar.
  • Add the mashed sweet potato to the wet mixture and mix until combined.
  • In another bowl, combine salt, cocoa, coconut flour and baking soda.
  • Add your dry ingredients to your wet and mix thoroughly. 
  • Finally, stir in the chocolate chips + pour the batter into the lined pan.
  • Bake the brownies for 20-25 minutes until set.
  • Cool in the pan for at least 2 hours before using the parchment paper to remove the brownies. Cut into 12 or 16 slices + enjoy!
