Paleo Sweet Potato Brownies

- 2 eggs
- 1/2 cup coconut sugar
- 2 tbsp almond butter
- 2 tbsp melted coconut oil
- 1/3 cup cocoa
- 1 cup mashed, cooked sweet potato
- 1 tbsp coconut flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp vanilla
- 1/2 cup chocolate chips
Preheat your oven to 350f or 175c and line an 8x8 pan with parchment paper.
In a large bowl mix combine almond butter, melted coconut oil, eggs, vanilla + coconut sugar.
Add the mashed sweet potato to the wet mixture and mix until combined.
In another bowl, combine salt, cocoa, coconut flour and baking soda.
Add your dry ingredients to your wet and mix thoroughly.
Finally, stir in the chocolate chips + pour the batter into the lined pan.
Bake the brownies for 20-25 minutes until set.
Cool in the pan for at least 2 hours before using the parchment paper to remove the brownies. Cut into 12 or 16 slices + enjoy!
