Paleo Snickerdoodle Energy Bites
These Paleo Snickerdoodle Energy Bites are the perfect snack or dessert with a healthy balance of fat, protein + carbs. Plus, they taste like a yummy, snickerdoodle cookie!

- 2 cups cashews
- 1 cup almonds
- 1 cup dates
- 1 tsp cinnamon
- 1 pinch sea salt
- coconut sugar for rolling
- 1-2 scoops collagen OPTIONAL
Place the salt, cinnamon almonds and cashews into a food processor or high speed blender.
Pulse until the nuts are broken down into small pieces.
Add the dates + pulse until a dough forms.
Chill for 30 minutes.
Roll the mixture into balls.
Toss in coconut sugar until coated.
Store in the refrigerator for up to a week!
