Strawberry Vanilla Energy Bites
These Paleo Strawberry Vanilla Energy Bites are made with all natural, real food ingredients. They're deliciously sweet, packed with healthy fats + the perfect grab and go snack.

- 1 cup almonds
- 1 cup dates
- 2 cups cashews
- 1/2 cup freeze dried (or dried*) strawberries
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup coconut butter, melted optional
Add the almonds and cashews to a high speed blender or food processor. Process until they have a fine ground texture.
Remove all of the stones from the dates + add them to the ground nuts, along with the strawberries, vanilla + salt.
Pulse the mixture until a cohesive dough forms.
Chill for 30 minutes in the refrigerator before rolling into balls.
Dip the balls in melted coconut oil + sprinkle with more freeze-dried strawberries (*optional).
Store in the fridge for up to 2 weeks.
** If using DRIED strawberries, decrease the amount of dates to 3/4 cup and add 1/2 dried strawberries.
