Strawberry Vanilla Energy Bites

These Paleo Strawberry Vanilla Energy Bites are made with all natural, real food ingredients. They're deliciously sweet, packed with healthy fats + the perfect grab and go snack.

Ingredients

  • 1 cup almonds
  • 1 cup dates
  • 2 cups cashews
  • 1/2 cup freeze dried (or dried*) strawberries
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup coconut butter, melted optional

Instructions

  • Add the almonds and cashews to a high speed blender or food processor. Process until they have a fine ground texture.
  • Remove all of the stones from the dates + add them to the ground nuts, along with the strawberries, vanilla + salt. 
  • Pulse the mixture until a cohesive dough forms.
  • Chill for 30 minutes in the refrigerator before rolling into balls. 
  • Dip the balls in melted coconut oil + sprinkle with more freeze-dried strawberries (*optional). 
  • Store in the fridge for up to 2 weeks.
  • ** If using DRIED strawberries, decrease the amount of dates to 3/4 cup and add 1/2 dried strawberries.
