Twice Baked Sweet Potatoes

Ingredients

  • 4 swee potatoes, medium-large
  • 1 lb ground meat pork, chicken or turkey are great!
  • 1 tbsp olive oil or coconut oil
  • 1 large onion, sliced
  • 1 bag baby spinach
  • 1 cup Paleo Green Goddess Dressing**

Instructions

  • Preheat the oven to 400f or 175c.
  • Place the sweet potatoes on a baking sheet + roast for 40 minutes or until tender.
  • In a skillet, heat a skillet on medium and brown the ground meat. Cook until completely cooked thorugh, breaking the meat into small chunks.
  • Remove the cooked meat from the pan + add the oil. Sautee the sliced onion with a sprinkling of salt until golden.
  • Add the spinach + the cooked meat back to the hot pan. Turn off the heat. Stir until the spinach is wilted.
  • In a bowl, scoop out the inside of the sweet potatoes. Try to leave a rim of flesh around the sweet potato skin to give the potatoes some stability.
  • Using a fork or a potato masher, mash the insides of the sweet potato in the bowl.
  • To the mashed sweet potato, add the meat, spinach and onions. Add the Paleo Green Goddess Dressing** and stir to combine.
  • Divide the filling and distribute it evenly between the 8 potato halves + place on a baking sheet.
  • Bake the potatoes for 30-40 minutes or until completely heated through and slightly golden. Top with extra Green Goddess Dressing.
