Paleo Pumpkin Spice Chia Pudding

This Paleo Pumpkin Spice Chia Pudding is creamy, dreamy + perfectly spiced. It's quickly thrown together in a blender which makes for easy cooking + perfect texture. Cover it in your fav toppings + you've got the perfect Fall breakfast, snack or even dessert.

Ingredients

  • 1 cup chia seeds
  • 1 can coconut milk
  • 1 can water simply refill the empty coconut milk can with water
  • 1/2 cup maple syrup
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 tbsp pumpkin pie spice see notes for a recipe for homemade pumpkin pie spice

Instructions

  • Simply add all of the ingredients to a high speed blender or food processor.
  • Turn onto high power and let blend until completely smooth (roughly 1-2 minutes). Scrape down the sides as needed.
  • Taste for seasoning + add more maple syrup or pumpkin pie spice if desired!
  • Pour into an airtight container and chill in the fridge until set - overnight or even an hour or two works!
  • Top with granola, greek yogurt, coconut and an extra drizzle of maple syrup.

Notes

**To make homemade Pumpkin Pie Spice, simply combine:
  • 3 tbsp cinnamon
  • 2 tsp ginger
  • 2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/4 tsp clove
