Gluten-Free Pumpkin Spice Baked Oatmeal

Ingredients

  • 3 cups gluten-free oats can use normal oats if not gluten-free
  • 2/3 cup maple syrup
  • 2 eggs
  • 1 cup pumpkin
  • 1 cup almond, cashew, oat or coconut milk
  • 1 tsp vanilla
  • 2 tbsp pumpkin pie spice
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup pecans

Instructions

  • Preheat the oven to 350f or 175c + choose your baking dish! Anything from an 8x8 to 9x13 will work, the resulting slice will just be thicker/thinner depending on the pan size!
  • In a large mixing bowl, combine the pumpkin, maple syrup, eggs, vanilla + milk. Mix until combined.
  • Add the oats, baking powder, pumpkin pie spice, salt + pecans. Mix again until everything is well coated.
  • Pour into the baking dish + bake for roughly 40 minutes or until the oatmeal looks dry on top.
  • Enjoy with extra milk, maple syrup or coconut cream!
