This Gluten-Free Pumpkin Spice Baked Oatmeal is perfect. It's great for breakfast, brunch, a snack, desserts - you name it! It's sweet + tender, spiced + comforting. This is a dish that the entire family will go nuts for every single Fall!
3cupsgluten-free oatscan use normal oats if not gluten-free
2/3cupmaple syrup
2eggs
1cuppumpkin
1cupalmond, cashew, oat or coconut milk
1tspvanilla
2tbsppumpkin pie spice
2tspbaking powder
1/2tspsalt
1/3cup pecans
Instructions
Preheat the oven to 350f or 175c + choose your baking dish! Anything from an 8x8 to 9x13 will work, the resulting slice will just be thicker/thinner depending on the pan size!
In a large mixing bowl, combine the pumpkin, maple syrup, eggs, vanilla + milk. Mix until combined.
Add the oats, baking powder, pumpkin pie spice, salt + pecans. Mix again until everything is well coated.
Pour into the baking dish + bake for roughly 40 minutes or until the oatmeal looks dry on top.
Enjoy with extra milk, maple syrup or coconut cream!
