Paleo Sloppy Joe Skillet
A few minutes of chopping + a few of stirring are all it takes to prepare this incredible Paleo Sloppy Joe Skillet. It's the entire meal, cooked in one pan + its a crowd pleaser the entire family will love - without any gluten, grains, dairy, soy or nuts!

- 1 pound ground beef
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 large sweet potatoes, chopped (roughly 3-4 cups)
Sauce
- 2 cups tomato sauce or puree
- 2/3 cup water
- 3 tbsp tomato paste
- 2 tbsp apple cider vinegar
- 1 tbsp mustard i prefer dijon!
- 2 tbsp honey or maple syrup omit for Whole30
- 1.5 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp coconut aminos (or soy sauce or tamari)
- pinch chili flakes
In a large skillet with a lid or dutch over, sautee the ground beef on medium-high until its brown + cooked through.
Add the chopped onion, celery and carrots. Sautee for 5 minutes.
While the veggies are cooking, make the sauce in a separate bowl by mixing together all of the sauce ingredients.
After cooking the veggies until they're starting to look transluscent, add the chopped sweet potato + sauce. Stir until everything is combined.
Bring to a boil and then turn the heat down to medium-low. Simmer for 25-30 minutes with the lid on.
Remove the lid + give it a stir. Simmer for another 10 minutes or until the sweet potatoes are tender + the sauce is thick.
