Sheet Pan Honey Mustard Pork

This Paleo Honey Mustard Pork Sheet Pan Meal is so quick to throw together! All of the work happens in the oven without you + its a delicious, family friendly, balanced meal.

Ingredients

  • 1 pork tenderloin
  • 1 peeled + chopped butternut squash
  • 1 chopped apple
  • 1 sliced red onion
  • 1 tbsp oil
  • 1 tsp salt

Marinade

  • 2 tbsp honey
  • 2 tbsp mustard
  • 2 tbsp oil
  • 1 tsp salt

OPTIONAL SAUCE

  • 1/4 cup mayonnaise
  • 1 tbsp mustard
  • 1 tbsp honey

Instructions

  • Preheat the oven to 425f or 220c.
  • Toss the chopped squash, apple and onion with 1 tablespoon of oil and salt. Spread the vegetables out onto a baking sheet in a single layer.
  • In a small bowl, mix together the oil, mustard, honey and salt for the marinade.
  • Lay the pork tenderloin across the vegetables and pour the marinade over the top.
  • Place into a hot oven and bake for 25-30 minutes or until the pork is cooked through.
  • Let the pork sit for 5-10 minutes after it comes out of the oven before slicing. This will help ensure it remains juicy!
    ***Optional step to mix together the sauce ingredients to drizzle over the top of the finished meal while the pork rests!
