Sheet Pan Honey Mustard Pork

- 1 pork tenderloin
- 1 peeled + chopped butternut squash
- 1 chopped apple
- 1 sliced red onion
- 1 tbsp oil
- 1 tsp salt
Marinade
- 2 tbsp honey
- 2 tbsp mustard
- 2 tbsp oil
- 1 tsp salt
OPTIONAL SAUCE
- 1/4 cup mayonnaise
- 1 tbsp mustard
- 1 tbsp honey
Preheat the oven to 425f or 220c.
Toss the chopped squash, apple and onion with 1 tablespoon of oil and salt. Spread the vegetables out onto a baking sheet in a single layer.
In a small bowl, mix together the oil, mustard, honey and salt for the marinade.
Lay the pork tenderloin across the vegetables and pour the marinade over the top.
Place into a hot oven and bake for 25-30 minutes or until the pork is cooked through.
Let the pork sit for 5-10 minutes after it comes out of the oven before slicing. This will help ensure it remains juicy!***Optional step to mix together the sauce ingredients to drizzle over the top of the finished meal while the pork rests!
