Paleo No Bake Peppermint Brownie Bites

These Paleo No Bake Peppermint Brownie Bites are the easiest, seasonal sweet treat. They're rich, chocolatety, and perfectly minty!

Ingredients

  • 1/2 cup cashew butter any nut butter will do
  • 2 tbsp maple syrup
  • 1 tsp peppermint extract
  • 1/2 cup almond flour
  • 2 tbsp cacao or cocoa powder
  • 1/4 tsp salt
  • 1/3 cup chopped chocolate

Optional Decorations

  • 1/3 cup chocolate
  • 1 tsp coconut oil
  • chopped peppermints

Instructions

  • In a medium/large mixing bowl, add the nut butter, maple syrup and extract. Stir until combined.
  • Next, add the almond flour, cacao and salt. Mix, pressing against the side of the bowl, until you get a stiff dough. It will take a moment, but it will come together!
  • Lastly, stir in the chopped chocolate or chocolate chips.
  • Using a cookie scoop or tablespoon, scoop out balls and roll between hands to shape!

Optional Decoration

  • Melt the chocolate and coconut oil together in the microwave in 30 second bursts.
  • Drizzle the melted chocolate over the top and sprinkle with crushed peppermint if desired.
