Paleo No Bake Peppermint Brownie Bites
These Paleo No Bake Peppermint Brownie Bites are the easiest, seasonal sweet treat. They're rich, chocolatety, and perfectly minty!

- 1/2 cup cashew butter any nut butter will do
- 2 tbsp maple syrup
- 1 tsp peppermint extract
- 1/2 cup almond flour
- 2 tbsp cacao or cocoa powder
- 1/4 tsp salt
- 1/3 cup chopped chocolate
Optional Decorations
- 1/3 cup chocolate
- 1 tsp coconut oil
- chopped peppermints
In a medium/large mixing bowl, add the nut butter, maple syrup and extract. Stir until combined.
Next, add the almond flour, cacao and salt. Mix, pressing against the side of the bowl, until you get a stiff dough. It will take a moment, but it will come together!
Lastly, stir in the chopped chocolate or chocolate chips.
Using a cookie scoop or tablespoon, scoop out balls and roll between hands to shape!
