Chocolate Strawberry Baked Oatmeal

Ingredients

Dry Ingredient

  • 3 cups ROLLED oats
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup maple syrup
  • 1 1/2 cup dairy-free milk
  • 2 eggs
  • 1 tsp vanilla
  • 2 bananas

Add-Ins

  • 1 cup chopped strawberries
  • 1/3 cup chopped chocolate I prefer dark, but use whatever you like!

Instructions

  • Preheat the oven to 350f or 165c + grab a baking dish! I love to use a 9x13, but you can choose whatever you like.
  • In a large bowl, add the dry ingredients and mix.
  • In a separate bowl, add the wet ingredients and whisk them together. Mash the bananas + whisk them into the wet ingredients.
  • Add the wet to the dry ingredients and stir until combined.
  • Add the chopped strawberries and chocolate (reserving a few pieces for the top, if you like) and stir.
  • Pour the oatmeal mixture into your baking pan and top with reserved strawberries and chocolate.
  • Bake for 40 minutes or until set and golden.
